The perfect muffin is a real treat. This is a worthy version and makes the ideal start to the day

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Line 6 holes of an oiled non-stick muffin tin with squares of greaseproof paper (cut a square and push it in so it comes up the sides to the top of the tin). Mix the flours, baking powder, sugar, seeds and sultanas in a bowl, then add the oil, banana, eggs and milk. Fold quickly with a large metal spoon and don't worry if the mix is still lumpy - mixing for too long makes muffins tough.
  2. Divide the mixture between muffin tins. Fill them to the top, sprinkle on a few extra seeds and bake for 20 minutes or until the muffins are cooked through. cool briefly, then put on a wire rack.

Three muffin flavour changes

Use all plain flour, use golden caster sugar instead of molasses sugar, and add milk and dark chocolate chips instead of raisins and pumpkin seeds. Add snipped dried apricots instead of sultanas, and use pistachios instead of pumpkin seeds. Add fresh raspberries and white chocolate rather than the dried fruit and seeds.

    Recipe sounds good and nutritious. I'll give it a try. It would be very helpful for me if quantities were given in measuring cups as well. Hard to weigh 125 grams of flour in the early morning hours... Thank you.

    Hi Kimberley-jane. If you want a low fat version, try the banana and blueberry muffins also on this website. I replaced the blueberries with pecan nuts and they were delicious!

    Hi ladies, Just a suggestion, as cup sizes vary (in more ways than one!) why not measure out 125grams into one of your cups then it might speed things up when making them. I´m just about to start them now. Will let you know.

    I measured 125 grams into a regular sized cappucino type cup and it came exactly to the rim. Hope this helps

    Yummy. I just made these with spelt wholemeal and spelt white flour. I didn't have muffin tins so I used a 12 queen cake tin, put enough grease proof paper in to each to be able to overflow a little. So they look, let's say, rustic, but they are gorgeous. Took about half an hour to cook though for some reason. Will definitely make again.

    didn't change anything in ingredients list. turned out lovely. just not sure about 'makes 6' part - i ended up with more than 12 and i'm pretty sure my muffin tin is average. but that's not something to complain about :) high fat content will prevent me from making them on a regular basis but definitely worth a try.

    Mix your dry ingredients and prepare tin the night before and by the time your oven is up to temp you have your wet ready and mixed into the dry. Fresh muffins for all

    I am not a huge muffin fan, but these are ok. They look very cute in their little baking paper nests and I received a lot of compliments about them at work.

    I doubled the recipe but only used 6 bananas. Worked fine. Made 19 good sized muffins! (Good job they freeze). Very yummy. They are a little high in calories/fat but a good breakfast on the run before a busy day.

    I halved the recipe and still got 6 full sized muffins! I think the calorie issue may be a bit exagerated, there is only a dash of oil and not too much sugar in as muffins go I think they are pretty healthy. I didn't have milk so used a dash of water and it worked fine. They are quite tasty but I think I'll add some mixed spice next time to add some flavour. Very filling and a good on the run breakfast!

    These are fab. I added 100g of choc chips instead of the sunflower seeds - a request from the kids! Delicious warm - especially with melted chocolate drops inside! Found they made 12 standard muffins and needed an extra 3 minutes in the oven.

    The nutritional analysis looks really odd - how many muffins are considered a serving? The protein & fat grams listed seem awfully high for what's in the recipe.

    delicious. I used pecans rather than pumpkin seeds and 3 bananas rather than 4, but they are very bananay and very tasty. Using muffin cases filled to the top my mixture made 8.
