Ox burger

No, it's not made of ox, it's the famous beef burger from the Durham Ox pub

Method

  1. To make the tomato sauce, combine all the ingredients in a small pan and season. Cover and simmer over a very low heat for 1 hour or until the sauce is rich and thickened. Allow to cool.
  2. Mix together all the burger ingredients and season well. Shape into 4 patties. Grill for 8-10 minutes, turning once. Serve in a bun or quarter ciabatta with the tomato

    My family can get enough of these burgers, very easy to make and they taste so much better than shop brought ones, I add a splash of vinegar to the meat mixture just for the extra bite.

    The burgers were very nice, however the tomato sauce was....inappropriate for burgers! I couldnt understand how the two recipes would work together but went with it anyway, but i was proved correct. The sauce would be more suitable to a pasta dish than burgers and i would not recommend putting the two together as suggested in this recipe. Just a heads up for anyone thinking about it!

    I was a bit unsure of the capers and gherkins in this recipe (even though I like them in other things) but decided to give it a go and I''m glad I did - these burgers were a revelation! Amazing flavour and bite - this is the only beef burger I'll be making from now on. So much better than any of the 'finest'/'taste the difference' etc stuff you can buy. Give them a try! I didn't bother with the tomato sauce - I made a salsa instead from red onion, chopped tomato, chillis and coriander. The tomato sauce looks as if it would be good with this if you broke up the mixture and made it into meatballs.

    I'd make these again, but would use more than the recommended quantities of all the extra bits (everything except the mince and onions) - they weren't that flavourful for something with so many flavoursome ingredients!

Ingredients

  • 500g beef mince
  • 1 onion , finely diced
  • 1 tbsp capers , roughly chopped
  • 1 tbsp gherkins , finely chopped
  • 1 egg
  • 3 tbsp breadcrumbs
  • a small bunch flat-leaf parsley , leaves chopped
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce

Tomato sauce

  • 2 x 400g tins of plum tomatoes , roughly chopped
  • 2 shallots , finely diced
  • 2 garlic cloves , crushed
  • 1 tbsp fresh thyme leaves
  • 2 tsp vegetable oil
