You can add any leftover vegetables you have in your fridge – just add them at the end, if they’re softer, so they don’t overcook.
For some extra festive spice, try adding a couple of cloves or star anise when you soak the ribs.

You can substitute the chocolate sponge for vanilla or any other cake you like.
Adjust the flavours to suit your tastes, so you could swap the plain chocolate for white chocolate or add fresh or frozen raspberries or cherries.
If you don’t like ginger, you can use dried fruits or nuts instead and moisten the cake with a simple sugar syrup.
This recipe can also be made as one big dessert in a trifle dish, if you’re feeding a crowd.
