  • 50g dark chocolate, broken into pieces
  • 325g jar good-quality lemon curd
  • 200g pot half-fat crème fraîche

  1. Melt the chocolate in the microwave for 2 mins on High, stirring halfway through. Meanwhile, stir together the lemon curd and the crème fraîche.

  2. Divide half the raspberries between the baskets, spoon over the lemon cream and top with the rest of the berries. Drizzle the dark chocolate over the tops of the baskets and leave in the fridge to set for 5-10 mins or up to 1 hr.

Excellent and really easy. I used the Extra-Zesty Lemon Curd from Waitrose and I think an ordinary lemon curd would need be improved by adding the zest of fresh lemon.
I used the quantities above and made eight full baskets. I didn't need 50g of chocolate - 25g would do and it's important to keep the little zig zags of chocolate quite fine and just for decoration as a sudden blob of chocolate doesn't taste right with the delicate lemony creamy taste.
Will definitely be giving it to dinner guests from now on and the family loved it too.

I made these a couple of nights ago with white chocolate instead of dark, and they were really tasty - not too heavy for after a big main meal either. Is the lemon curd mixture meant to set? I left mine in the fridge for about an hour and the mixture was still soft when I took them out - or does the recipe just mean that the chocolate is meant to set? Delicious anyway!

Made this last night and was absolutely gorgeous. My guests were very impressed!
Exceptinally easy to make.
Changed raspberry's for strawberry's and crumbled a flake over the top. only used a quarter of lemon curd aswell.

This was super quick to make and yet looks impressive.

The ratio of lemon curd to creme fraiche meant that the mixture was a bit too tangy for me and also a bit too sweet. So I added more creme fraiche to tone it down. Next time I will tone it down even more.

The baskets do go soggy after a while so best eaten a max of a couple of hours after they've been made (as Swager says!).

I had some raspberries and melted chocolate left over, so served with the raspberries dipped in chocolate on the side.

Given that this takes no time at all and looks good, it deserves 5 stars!

Very quick and easy to make, especially to prepare in advance.

Insead of the brandy snap baskets, I crumbled chocloate muffins into little dessert dishes then put the raspberries and mixture on top...delicious and enjoyed by all!!!

Hello, my family loved this recipe although i used strawberrys instead of raspberrys, has i couldn't get none at the supermarket.
But went down better then expected. great idea so quick and absoulately divine to eat.

will be doing this again.

Easy recipe very tasty .Put the mixture into ramekin dishes and crumbled the brandy baskets on top easier to eat .Guests were impressed

i made this for my HE coursework, it was easy and it tasted delicious. I added some lemon rind in as well to add more flavour

Fantastic results from such a simple recipe. I used a 410g jar of Gales Lemon Curd and mixed it with about 350g of half fat creme fresh, I think it made about 8 baskets. Instead of melting the chocolate to drizzle over, I made it even simpler by crushing a cadbury's flake over top. Delicious. Will definately do again.

Very simple and easy to make. Baskets are tricky to find outside of the festive season. I don't like taste of creme fraiche too much on its own but mixed with lemon curd it's fab! Don't be tempted to put too much chocolate on top, it's impossible to eat after 1 hour in the fridge!

We were not keen on these, they are very simple to make. But we just thought they were too sweet. Maybe we got a measurement wrong somewhere, but was different to how we thought they would be.
