  • 400g can cherry tomatoes
  • 1 tbsp caster sugar
  • 100ml vegetable stock
  • dash each Tabasco and Worcestershire sauce
  • 2 tbsp mascarpone
  • few torn basil leaves (optional)

For the dippers

  • 1 medium ciabatta roll, halved
  • 1 garlic clove, halved
  • 125g ball mozzarella cheese, shredded

  1. Put the tomatoes, sugar, stock and sauces into a medium pan with some salt and pepper. Bring to a simmer and cook for 5-10 mins. Stir in the mascarpone and blend to a smooth soup. Return to the pan and keep warm while you make the dippers.

  2. Heat the grill to high and toast the ciabatta until golden. Rub with the garlic, season, then top with the cheese and grill until melted and golden. Slice into fingers and serve with the soup, sprinkled with the basil, if using.

Greats recipe but the second time of making it I used tinned peeled tomatoes to save having to sieve the skins and it was delicious.

This soup is absolutely delicious and the closest I've found to tinned soup for fussy children! I agree with another reviewer that it is better sieved. Won't seem to let me rate so 5 stars!

This soup was very quick and easy to make although I would use a teaspoon of sugar next time as we all found it far too sweet!

Lovely recipie! I made this with my ten year old and he could do it all himself. The mascarpone makes it deliciously creamy. Will definitely make this again.

This is a great, simple soup with lots of flavour. Tastes so much fresher than tinned tomato soup.

This soup is great for when you want something fresh and home-made but are short on time. It takes 10 minutes to get on the table and couldn't be easier. I do however add less sugar as I find it too sweet otherwise.

This is the first soup I have made in my life. I was very satisfied with the result. As I didn't have tabasco, i used chill flakes instead.

This is a gorgeous soup! My 8 yr old boy always ask's when I will be making it again. As the mascapone is quite high in fat has anyone found a lower fat alternative?

alilysutherland's picture

You can get mascarpone lighter. I got mine from tescos and it has 30% less fat but it tastes just the same. Hope this helps :)

Try a spoonful of natural greek yogurt in any soup at the end when you've taken off the heat, or add a nice spoonful on top to serve, especially nice with a spicy soup! :)

Without a doubt the best tomato soup I have tasted and unbelievably easy! Mascarpone adds a great creamy flavour. Had to double the quantities to serve 2 though.

1 tsp. Sugar instead of 1 tbsp. Use a little more stock. eg. 500 ml. for 6 persons.
Perfect quick recipe, made it several times. Big Hit here in Holland.

I substituted cherry tomatoes with 2x whole peeled plum tomatoes, doubled up on other ingredients and left out the mascarpone. End result was very tasty!
