Gnocchi with Boursin® Truffle, tomatoes & pancetta

Step 1
Heat the oil in a pan over a medium-high heat. Once hot, stir in the gnocchi and pancetta and cook for 8-10 mins, until golden and crispy all over, then remove to a bowl using a slotted spoon.
Step 2
Put the pan back over a medium heat and stir in the onion with a pinch of salt. Cook for 8-10 mins or until it begins to soften, then add the garlic, tomatoes and basil stems and cook for a further 10 mins, until the tomatoes have broken down completely and turn jam-like.
Step 3
Reduce the heat to low, then stir through most of the basil leaves, the Boursin® Truffle, and the cooked gnocchi and pancetta. Season to taste with salt, freshly ground black pepper and a pinch of sugar, then divide between four bowls. Scatter over the remaining basil leaves and serve with a green salad.
