Marinated Boursin® cheese in olive oil with roasted summer veg

Step 1
Roll the Boursin® Garlic & Herbs into balls around the size of a large marble – you’ll make around 20. Pour the olive oil into a large, sterilised jar, then spread the chopped basil and mint on two separate plates. Roll half of the Boursin® cheese balls in the basil and half in the mint, then drop into the olive oil along with 1 garlic clove. Screw the lid on the jar, then chill for at least 2 hrs (it can be kept in the fridge for up to a month).
Step 2
When ready to serve, heat the oven to 200C/180C fan/gas 6. Add the courgette, red pepper, aubergine and 2 garlic cloves to a roasting tin, then drizzle over the 2 tbsp of olive oil. Scatter over the thyme sprigs, then combine everything together. Cook for 30 mins, then add the tomatoes and roast for a further 10-15 mins, until the veg is tender and beginning to char.
Step 3
Serve the veg with the juices from the tin. Top with the marinated Boursin® cheese balls and a little oil from the jar, if you like.
