Method

  1. Pat the chickpeas dry with kitchen paper. Tip into a food processor along with the onion, garlic, parsley, spices, flour and a little salt. Blend until fairly smooth, then shape into four patties with your hands.
  2. Heat the oil in a non-stick frying pan, add the burgers, then quickly fry for 3 mins on each side until lightly golden. Serve with toasted pittas, tomato salsa and a green salad.

    Very easy to make, we really enjoyed these. I made them into mini patties (got 15 out of the recipe) and baked them in the oven until crunchy on the outside, turning once (took about 20 mins at 200 degrees). Served in pitta bread with salad and garlic mayo.

    These were delicious. I used coriander instead of parsley and served with toasted cumin flatbreads. Will definitely be making these again and again.

    Quick, nutritious, delicious and cheap. Trying to cut down on the amount of meat we eat I gave these to my 3 & 7 year old boys and held my breath...."these are the best burgers I've ever had" I Made them a second time and it was "yea, my favourite!" Say no more!

    Quick and easy! I think next time I would mash the chickpeas with a fork as someone previously mentioned, because I think it might have a more interesting texture. Good with some salsa and sour cream dip

    love this recipe, have been making it weekly for months.. very cheap and very easy!! Only thing I do differently is to make them much smaller, slightly bigger than a 50 pence piece size, the texture is much better. Goes perfectly with the tomato salsa from this recipe- http://www.bbcgoodfood.com/recipes/2733/mozzarella-with-tomato-and-chilli-salsa so delicous!!

    We used to make the more traditional falafel balls, but these burgers are so much better. they hold together really well and taste great. It's a regular on our weekday menu now.

    Super quick and very yummy. Definitely needs either salsa or soured cream with it, otherwise it is very dry. It goes great with an avocado salad which has a lovely cooling effect to counteract the spices in the falafel. I roasted these in the oven because I'm not too keen on frying and it worked out great!

    I added lemon zest and juice,a handful of spring onions and some chopped fresh coriander the first time I made these. Nice but still a little bland. Served with roasted red peppers, flatbreads and tzatziki plus extra harrissa. Don't add too much flour, I wonder if they'd be lighter without. The second time I added chopped olives to the mix after processing and upped all the spices, lemon and harissa. Shaped each around a cube of feta which was yummy after cooking!

  • garlic clove , chopped
  • handful of flat-leaf parsley or curly parsley
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1⁄2 tsp harissa paste or chilli powder
  • 2 tbsp plain flour
  • 2 tbsp sunflower oil
  • toasted pitta bread
  • 200g tub tomato salsa , to serve
  • green salad , to serve
  • 1 small red onion , roughly chopped
