  • 400g can chickpea, rinsed and drained
  • garlic clove, chopped
  • handful of flat-leaf parsley or curly parsley
  • 1 tsp ground cumin

  • 1⁄2 tsp harissa paste or chilli powder
  • 2 tbsp plain flour
  • 2 tbsp sunflower oil

  • toasted pitta bread
  • 200g tub tomato salsa, to serve
  • green salad, to serve
  • 1 small red onion, roughly chopped


  1. Pat the chickpeas dry with kitchen paper. Tip into a food processor along with the onion, garlic, parsley, spices, flour and a little salt. Blend until fairly smooth, then shape into four patties with your hands.

  2. Heat the oil in a non-stick frying pan, add the burgers, then quickly fry for 3 mins on each side until lightly golden. Serve with toasted pittas, tomato salsa and a green salad.

Really great recipe, cheap, quick and easy. I personally prefer a stronger flavour, so I doubled the garlic, cumin and harissa and used corriander instead of parsley.

Delicious and marvellously simple, though I would suggest dusting with a little extra plain flour before frying, as they stuck to the pan the first time and I ended up with burnt bits. Now I add some chopped sweet bell peppers and diced and steamed sweet potato, which is just lovely. Served in a wholemeal tortilla wrap with sweet chilli sauce, baby spinach and a little fresh coriander. Yum. One of my favourite vegetarian meals.

We thought they lacked flavour.If I make them again I would use whole cumin and coriander seeds,toast and grind them together. But they do make an economical meal.

quick to make, costs virtually nothing and super tasty!

i was a bit more liberal with the garlic and spices but definitely a five star recipe.

They were nice but as am trying to cut down on the fat content I tried to dry fry. I do think this made them less tasty and next time might try the oven idea. I would also add more garlic and harissa as I like things with a very strong flavour. A few tweaks needed but good.

Brilliant! They had a nice spicy kick and a lovely texture. I'll never buy falafel from a shop again.

I love Falafels, however I was dissapointed at my first homemade attempt, I think they were a little bland and needed a bit more flavour. Next time Im going to add more spices and see what happens. On a positive note they were very easy to make so I will give them another go.

I am excited to try these but I would like to cook them in the oven as well. Does anyone know what temperature they cooked them for?

Absolutely fantastic, what with the credit crunch and impending recession these make a great cheap meal....should be on people's dinner tables up and down the country!

I used Gram flour (Chick pea flour) instead of plain flour and i didn't have any Parsley but very tasty indeed

I felt these were missing somthing as I personally found them a bit bland, maybe could've done with a bit more chilli powder and a bit less flour.

This was lovely recipe, taste yummy but mine came out pretty dry from the food processor. It may be that I did not blitz it smooth enough..but good veggie alternative for the week! Really nice with pita bread spread with hummous and salad!

Irresistible, easy and quick! I did add a little more flour because the patties were too smooth, served with natural yogurt seasoned with ground coriander.
