Creamy courgette lasagne

Method

  1. Heat oven to 220C/fan 200C/gas 7. Put a pan of water on to boil, then cook the lasagne sheets for about 5 mins until softened, but not cooked through. Rinse in cold water, then drizzle with a little oil to stop them sticking together.
  2. Meanwhile, heat the oil in a large frying pan, then fry the onion. After 3 mins, add the courgettes and garlic and continue to fry until the courgette has softened and turned bright green. Stir in 2/3 of both the ricotta and the cheddar, then season to taste. Heat the tomato sauce in the microwave for 2 mins on High until hot.
  3. In a large baking dish, layer up the lasagne, starting with half the courgette mix, then pasta, then tomato sauce. Repeat, top with blobs of the remaining ricotta, then scatter with the rest of the cheddar. Bake on the top shelf for about 10 mins until the pasta is tender and the cheese is golden.

    It's an amazing recipe!! I made this with mozzarella on the top, yummmmmmmmmy!! I sliced the courgette as well as grated them, the texture was very very lovely!! I made it twice in a week because it was that delicious ;) Give it a go, I'd go as far and say that I prefer this so much more to the normal meat lasagne!

    really tasty! made this for a group of meat eaters and vegetarians and everyone enjoyed it. very easy to make, I also added mushrooms to the courgette mixture and some mozzarella on the top.

    This is delicious!! Really creamy and tasty. I always get dry lasagne sheets stuck together when I part cook them so used non-cook dry lasagne Verdi sheets. I had to cook it for a little longer but still yum!! :)

    Came out just like the photo, good to freeze for another day also. I did not grate the courgettes just chopped them different sizes, cooks in 10 mins once you cook the lasagne sheets separately. A success. It is definitely worth trying this.

    Great dish! I made a small change to recipe for a texture difference: after the courgette/onion/garlic mix was cooked through, I separated half into a second pan. In the first pan I continued with the ricotta/cheddar instructions and in the second I added the pasta sauce. This time I used a jar of veggie marinara.

    I honestly don't get why this recipe is rated so highly. I mean, it's easy and looks nice when it comes out of the oven, but overall I found it pretty bland. I was dubious about using sauce from a jar but gave it a whirl (used Lloyd Grossman tomato and basil) and honestly, you just can't get away from that sauce from a jar taste (and I cooked it for 30 minutes). I think it would be nice if you added chopped bacon (although not ideal for veggies, obviously). If no bacon then you definitely need to season well, or perhaps use a saltier cheese like Parmesan.

    Great alternative to the meat alternative will make again although one of my children did not like it. Even myhusband enjoyed it and he doesn't like courgette.!

    This is a great easy quick dish to make . I too used fresh lasagnes which was quicker, and replaced ricotto with mascarpone which I already had in and it tasted great although it was probably richer . I also crumbled some creamy blue cheese, dolcelette, on the top which gave it extra flavour. My husband thought it was great. I will make it again for my veggie daughter and grandchildren this time with ricotto .

    I made this recipe for some friends and it went down a treat. They all loved it - I will made it again. A bit of a pain grating the courgette as I don't have a kitchen gadget that will go it for me but never the less worth the effort.
