Method

  1. Bring a large saucepan of water to the boil, then add the cauliflower and cook for 5 mins – lift out a piece to test, it should be cooked. Drain the cauliflower, then tip into an ovenproof dish.

  2. Heat oven to 220C/200C/gas 7. Put the saucepan back on the heat and add the milk, flour and butter. Keep whisking fast as the butter melts and the mixture comes to the boil – the flour will disappear and the sauce will begin to thicken. Whisk for 2 mins while the sauce bubbles and becomes nice and thick. Turn off the heat, stir in most of the cheese and pour over the cauliflower. Scatter over the remaining cheese and breadcrumbs.

  3. When the chicken comes out of the oven (see 'Goes well with' recipe), pop in the Cauliflower cheese and bake for 20 mins until bubbling.

I agree easiest ever!! I added spring onions and the wholegrain mustard, extra cheese on the top with the fresh breadcrumbs and I just grilled it while I dished up the chicken, just to make it lovely and crisp and golden, my husband loved it,

Delicious recipe, a favourite of ours. We always make sure we use a good strong cheddar such as Tickler, it makes such a difference!

Made this yesterday. Added more mustard and extra cheese. Left it to cool while I went shopping. My husband arrived home while I was out and sent me a text 'food smells wonderful'. I tasted wonderful too. I paid 50p for the cauliflower and had the other ingredients in the house already! I will never buy a ready made cauliflower cheese dish again! So easy to make.

Made it a few times now, the five minutes boiling time should be reduced if you use smaller florets of broccoli. And add a little more cheese if you are skinny like me!

Nice and simple!
I steam all the vegetables to avoid wasting nutriens in the water (place them in a colander or strainer over the pot of boilig water and cover tightly).

great recipe, after comparing to other recipes I added some grated nutmeg and a teaspoon of mustard. maybe a little extra cheese too for personal taste. yum!

This was a beautiful cheese sauce!read the reviews and as suggested added pinch of nutmeg whole grain mustard,black pepper and extra cheese! Would be a lovely sauce for macaroni!

Absolutely delicious, to be honest I had forgotten how nice cauliflower cheese was it was that long since I had made it. As others have mentioned making the sauce was so simple, I shall always make it this way from now on. I also added quite a bit of English mustard and a little more cheese then recommended and this will now be a regular at our table.

Easy to make cauliflower cheese. I steamed the cauliflower and really seasoned it well. A good strong cheese is essential and the breadcrumbs add that lovely crunch to the topping.
