  • 400g penne (or other tube shape) pasta
  • 250g pack chestnut or button mushrooms, wiped clean
  • 8 rashers streaky bacon

  • 4 tbsp pesto (fresh from the chiller cabinet if possible)

  • 200ml carton 50% fat crème fraîche
  • handful basil leaves

Method

  1. Cook the pasta in boiling water in a large non-stick saucepan according to pack instructions. Meanwhile, slice the mushrooms and snip the bacon into bite-size pieces with scissors or a sharp knife.

  2. Reserve a few drops of the cooking water in a cup or bowl, then drain the pasta and set aside. Fry the bacon and mushrooms in the same pan until golden, about 5 mins. Keep the heat high so the mushrooms fry in the bacon fat, rather than sweat.

  3. Tip the pasta and reserved water back into the pan and stir over the heat for 1 min. Take the pan off the heat, spoon in the pesto and crème fraîche and most of the basil and stir to combine. Sprinkle with the remaining basil to serve.

This is so easy to do and so tasty. But I think the measurements of bacon and mushrooms are mean for 4 people! Maybe I'm piggy but I like lots of mushrooms!!

I was delighted to see that this recipe could be made dairyfree. HA HA!!
Pesto contains parmesan so using it to replace creme fraiche is not going to help. A lovely recipe to make when my daughter is not here, though.

Made this tonight for tea, quick easy and tasty but quite salty I guess due to the bacon!! Would prob make again, especially If in a hurry.

Just loved this recipe so easy to make and tasted wonderful. In addition to the above, to start we fried off a red chilli and garlic in a little olive oil and added some cherry tomatoes when cooking the bacon and mushrooms, finally topped it off with some grated parmesan cheese when ready to serve - really, really good!

YUM!! Use a 1/4 of a cup of the pasta water - 175g Crete Fraiche and the 4tsp of pesto - I always use Green (basil) pesto and it comes out creamy all the pasta coated but not sticky!
I have a fussy 12 year old and he just ate the whole lot of what I dished up for him - I'm surprised !! Lol

Absolutely delicious. Can't wait to have this again. Just used a jar of cheap red pesto and a decent sized dollop of creme fraîche (not too much though - I don't actually like the taste of creme fraîche) and it was perfect. Quick, cheap, easy and yummy.

As my name suggests i'm not only a new cook but quite rubbish also... i sort of hashed this together last night with the right ingredients but got a bit excited at the end and may have just sploshed all the creme fraiche i had (a small organic pot was like 89p) and all of my fresh pesto.

It looked alright and quite like the pictures but tasted a bit funky...
it was alright but a bit sour tasting did i do to much or too little of the creme fraiche or the pesto it was all new ingredients.

Nice but go easy on the creme fraiche and the pesto, I was a bit heavy handed and it made it a bit too rich.

Absolutely lovely. Have made similar before but this turned out better. Added a chopped shallot and garlic, and some parsley at the end. Used excess liquid from frying bacon and mushrooms as well as the pasta water which made it quite light and tasty. Will do again.
