  • 1l hot vegetable stock
  • 100g frozen pea

  1. Finely chop the onion. Heat 2 tablespoons of olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes). Add the bacon and fry for a further 5 minutes, until it starts to crisp.

We have this often, usually with roast chicken. Not got the texture of a stand-and-stir risotto but tasty and so easy. Perfect for a midweek dinner.

This is now a regular dish in our household. It's simple ingredients, easy to make (even the hubby can make it) and nice and tasty. We also add a little garlic :)

I made this tonight, I took on board the previous comments and added 2 cloves of crushed garlic when cooking off the onion and then some chopped spring onion added with the peas. I would definitely make this again and probably add some more vegetables like leeks etc as suggested below.

Delicious - added a bit of garlic but otherwise followed recipe exactly, and extremely easy to make.

Made this for dinner tonight - the first time one of these "easy" risotto recipes has produced satisfactory results. Served four easily and was delicious will definitely cook again and will try varying the ingredients.

This is a really lovely recipe, so simple but very tasty. I have added few extras, couple of shallots and crushed garlic with the onion. then brocolli, spring greens, and sweetcorn. I have also made it with chicken stock and didn't add any salt, just a lot of pepper and little bit of chilli flakes. It turned out so yummy, definitely will be making it again, adding whatever extra veg i will find in a fridge :)
