  1. Finely chop the onion. Heat 2 tablespoons of olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes). Add the bacon and fry for a further 5 minutes, until it starts to crisp.

  2. Add the rice and stock, and bring to the boil. Stir well, then reduce the heat and cook, covered, for 15-20 minutes until the rice is almost tender.

  3. Stir in the peas, add a little salt and pepper and cook for a further 3 minutes, until the peas are cooked. Serve sprinkled with freshly grated parmesan and freshly ground black pepper.

Love this - if you can't be bothered to get your scales out to weigh the rice it comes uyp to just over 1/2 pint or 12floz on my measuring jug

This was fine for what it was - the texture was good and was just like any other ristotto that I've cooked. The flavour was relatively boring though. Good enough for a quick midweek meal but probably won't make again for a while.

This was fantastic, and so simple to make! Everybody absolutely loved it and there was no leftovers whatsoever! One minor thing that I found was that I didn't need to add salt as the recipe said, because it already tasted quite salty but that could just be me - I advise you take a small spoonful to taste before adding the peas and seasoning. Other than that small detail, it was a great simple recipe!

I have made this a few times now, for me and my Fiance, but also for his two daughters 12 and 8. They all loved it. I add homemade chicken stock to mine, chopped parsley and some leftover cooked chicken ( add near the end of cooking so it doesn't go stringy).
This is a great recipe when you havn't got much in the fridge and can raid the store cupboard. Will be a regular in our house, so quick and delicious and looks great sprinkled with a bit of fresh parsley. yummy.

Id never made risotto before as i thought id mess it up, but this was very easy as i didnt have to keep adding the water, it just went in all in one go.
I used smoked bacon to add a little more flavor.
It was very nice and easy to make, and had all my housemates hanging their noses over it whilst i was eating. shall definatly make more for everyone next time :)

This is a real comfort food recipe. I used my homemade chicken stock and used leeks instead of onion. Both the veg stock recipe and chicken stock recipe are equally yummy. Give it a go.

I can't remember if I have rated this one before, but it's really very good, served for lunch with a green leaf salad. Guests asked for seconds. Very tasty and very easy.

Absolutely love this one in our house! Uses basic store-cupboard ingredients to make a very tasty risotto. We mix in some grated parmesan just before taking it off the heat.
