  1. Zest and juice 2 of the limes into a big salad bowl. Top and tail the remaining 2 limes to sit flat on a chopping board. Use a small serrated fruit knife to cut away the peel and pith in downward strokes. Cut the segments from the pith and roughly chop. Add to the salad bowl with the apples, fennel, cucumber, celery, spring onions and olive oil. Cover and chill until ready to serve.

Lovely with griddled chicken. I halved the recipe this evening and my 7, 9 and 12 year old plus myself ate the lot with chicken

Wow... Despite the time it takes to prepare all the ingredients (so much chopping), this is extremely delicious and was raved about by all my guests. Served as part of a Caribbean themed evening and would also serve along with a BBQ. Easily halved or doubled.

What a great salad! I always look for some new interesting ideas to serve with main meal that will uplift the overall taste - this one is such a winner! Love the combination. Apples and fennel - perfect match!
