Lemon meringue pie s'mores

We gave classic American marshmallow s'mores a citrussy makeover by adding lemon curd, and swapping the traditional crackers for shortbread biscuits
- 16 all-butter shortbreads rounds
- 8 large marshmallows (vegetarian brand, if required)
- 8 tsp lemon curd
- STEP 1
Preheat the grill to high and line a baking sheet with parchment. Put 8 shortbread rounds on the tray with a marshmallow on each. Grill until the marshmallow begins to brown and melt.
- STEP 2
Put a tsp of lemon curd on the other 8 shortbread and sandwich with the melty marshmallow layer.
