A warming creamy soup made with broccoli and cheddar cheese

Ingredients

  • 1 onion, peeled and chopped
  • 1 tbsp olive oil
  • 4 medium potatoes, peeled and cubed
  • 1 head of broccoli, stalks trimmed and cut into florets
  • 1l chicken stock
  • 250ml single cream
  • 175g mature cheddar cheese, grated
  • sea salt and cracked black pepper

Method

    1. warm the olive oil in a large soup pot and add the onions. Cook until soft and golden in colour. Add the potatoes and continue to stir for a few minutes.
    2. Add the chicken stock and bring to the boil. Add the broccoli florets and reduce to simmer.
    3. Continue to simmer for around 20 minutes or until the potatoes and broccoli are soft.
    4. Blend until smooth and then stir in the cream. Continue to simmer on a low heat and gradually add the cheddar stirring continuously for around 10 minutes. Season and serve.

I love this soup. Delicious and filling. I used vegetable stock and vintage cheddar. This is now a regular meal for me. Would be great with buttered rolls or toast

Thank you for lovely comments.. I would recommend freezing before adding the dairy! Will last longer!

Also about question of freezing - I have another soup recipe (courgette) that had for years and you can freeze it before adding the dairy (milk in that recipe case). So I would say freeze before putting in the cream and cheese.

lovely flavour soup - I used home grown romanesco brocolli which is a stronger flavour than ordinary brocolli and natural yoghurt instead of the cream - definitely will remake

Shame no information on freezing though. I like to make soup in larger amounts and freeze so OH has plenty of tasty available food in the freezer.

An easy recipe to follow, using mature cheddar cheese added that little extra kick. Delicious and strongly recommend.
