Step 1
Heat the oven to 220C/200C fan/gas 7 and line a baking tray with baking parchment. Add the flour and egg to two separate shallow bowls, then add the breadcrumbs and dried sage to a third shallow bowl and toss together.
Step 2
Lightly roll the Boursin® cheese in the flour, then the egg, and finally the sage breadcrumbs, making sure it’s evenly coated. Place on the baking tray, drizzle over the oil and bake for 15-20 mins until golden brown.
Step 3
Meanwhile, to prepare the salad, whisk all the dressing ingredients together and season to taste. Toss the rocket, chicory and celery with half the dressing, then spread out on a platter. Top with the apple, pecans and cranberries, then drizzle over the remaining dressing and place the Boursin® in the middle of the salad.
