Step 1
Add the potatoes to a large pan with a generous pinch of salt. Cover with cold water, bring to a boil, then leave to simmer for 30 mins.
Step 2
Meanwhile, heat 30g of the butter in a frying pan over a medium heat. Add the onion, shallot, carrots and garlic and cook for a few mins until softened. Mix in the beef mince and cook for another 10 mins. Season with salt and pepper, then transfer to a baking dish and set aside.
Step 3
Boil the broccoli in salted water for 8-10 mins, then drain and mash with a potato masher or fork, before mixing in the Boursin® cheese.
Step 4
Once the potatoes are ready, drain well and add the milk, nutmeg and remaining 50g of butter. Mash with a potato masher to create a purée, then season well with salt and pepper.
Step 5
Heat the oven to 240C/220C fan/gas 8. Spread the potato purée over the mince, then top with spoonfuls of the broccoli Boursin®, swirling it through the purée with a fork. Sprinkle some extra Boursin® across the top, then bake for 10-15 mins and serve with a small dressed salad.
