Ingredients

  • Salmon or similar (1 per person)
  • Sticky or Thai rice
  • Soy sauce (approx half bottle)
  • Lemon juice (equal to soy)
  • 2 or 3 chopped chillis with seeds
  • 4 good quality chopped tomatoes large
  • Small pack coriander chopped
  • Red onion chopped
  • 100 ml water (to taste)

Method

  • STEP 1
    Plain bake fish in tin foil 200 degrees approx 20 mins
  • STEP 2
    Cook rice (microwave works well)
  • STEP 3
    Chop all other dry ingredients into bowl
  • STEP 4
    Add all wet ingredients - adjust to taste
  • STEP 5
    Serve up fish and rice then spoon over sauce - yum!!!!
