This slightly sweet and tangy dressing is creamy and perfect with bitter greens and wild grasses. A fresh accompaniment with aged cheeses.

Ingredients

  • 2 over-ripe pears
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • ¼ tsp sea salt
  • black pepper (optional)
  • ¼ cup roasted walnuts, finely chopped

Method

    1. Peel and core pears. If hard, poach in water for 5 minutes.
    2. Place in a food processor and add oil, vinegar, salt and pepper and puree until creamy and smooth.
