Method

  1. Heat oven to 220C/fan 200C/gas 7. Beat the olives or sundried tomatoes, garlic and almost all the herbs into the cheese, then season. Cut a slit along the side of each chicken breast, then use your knife to open it out into a pocket.

  2. Stuff each breast with a quarter of the cheese mix, then press to close. Lift onto a greased baking tray. Season the top of the chicken, then overlap tomato slices over the top of each piece of chicken. Season, then scatter with the remaining herbs. Drizzle with olive oil.

  3. Roast for 20 mins until the chicken is golden around the edges and the tomatoes look a little shrivelled. Serve with a green salad and crusty bread to mop up the juices.

This was amazing, so easy and tasty. I mixed some harrisa paste with philadelphia and chopped garlic for the filling as I didn't have olives or sun dried tomatoes.

Delicious!! This went down very well indeed! The only comment i'd add is to pop it under the grill for a couple of mins. I had lots of juice and someone actually thought that it was boiled as it was so moist!

I made this as a quick dinner for me and a friend, I used sundried tomatoes instead of olives, but I put a few more in then the recipe suggested because I was worried about flavour. The chicken turned out beautifully and was lovely served with herb roasted new potatoes

Love olives but it was olive overkill with this. Great recipe though and will try with sun-dried tomatoes next time.
