Coffee Cake

This delicious coffee cake is great for all occasions and tastes AMAZING! It is simple and easy to make!

Method

  1. Preheat the oven at 160C, 325 F,gas 3.Baseline and grease two equally sized sandwich tins. Add the sugar and the butter to a bowl and whisk until very fluffy and a pale cream.
  2. Wisk the eggs in a mug with a fork and then add them gradually to the mixture with 1 tbsp of flour each time. Make sure you don't use all the flour.
  3. Add the rest of the flour and the baking powder to the mixture and fold it in gently.
  4. Dissolve the coffee in the boiling water and add to the mixture still folding. Divide into the sandwich tins and cook for 30 minutes
  5. Meanwhile Cream the butter and the icing sugar until light and fluffy. Dissolve the coffee in boiling water, making sure you don't add too much water or the icing will be runny and add it to the butter and icing sugar. Whisk and leave in the fridge until the cake is done.
  6. Once the cakes are done and have been put onto plates spread the icing on the bottom of one of the cakes (leaving around half of the icing for the top) and spread the strawberry jam ont the bottom of the other. Spread the remainig icing ontop of the cake. decorate with cherries or walnuts. ENJOY!

    I made this for my Mum's birthday, without the jam as I know she is not a big fan of it, and she really loved it. She said it was the best coffee cake she had ever tasted. I agree! I, on the other hand, love jam and will probably try it with it! Thank you x

    I used this recipe to make cupcakes. Cooked in 15 minutes in the middle oven on gas mark 7. Iced the cakes with butter icing..Very yummy.

    Made this for my boyf and his family and they loved it, but instead of jam i put a layer of butter coffee icing with chocolate buttons in the middle and a few walnuts on the top for decoration.

    I tried this recipe as coffee cake is one of my favourites. I altered it slightly and substituted strawberry jam with apricot jam as that is what I had in at the time. Both myself and my family thoroughly enjoyed it and I will be making this one again and again :0)

    Well I just put the cake in to the oven. Not feeling very confident as the quantity of batter is very small when split between to 8" tins. I did find it odd that the tin size was not specified. There looks like enough batter for one tin only:-(

    Mine was cooked after about 20 minutes but didn't rise very well, I didn't want to risk leaving it in for longer in case it burnt! I think I put a bit too much coffee in the icing because it tastes very bitter, let's just hope the cake tastes good!

    Cake tin size has not been listed but recipe appears to be for a 18cm/7 inch tin. If using a 20cm/8 inch tin, change sugar/butter/flour from 150g to 225g and use 4 eggs instead of 3.

    it was my first atempt @ a coffe cake and it was amazing!!!!!!!!!!! i didn't add the jam and i dindn't put baking powder in as i don't like the taste it makes

    This was really easy to do (I also left out jam - just not brave enough) - I don't like Coffee, but my husband assures me that this was very good. I did mine like a tray bake, cut in half & sandwiched with a layer of icing, covered the top in the icing & put walnuts on like you'd expect as decoration. So was mega easy & went into a storage box easier than a circle type cake.

  • 150g caster sugar
  • 150g butter or margarine
  • 3 eggs
  • 150g self raising flour
  • 1 1/2 tsp baking powder
  • 1 tbsp hot water
  • 1 tbsp instant coffee (add more if you like it strong)

  • 225g icing sugar
  • 100g butter or margarine
  • 1 1/2 tbsp instant coffee
  • 1 tbsp hot water
