Sweet Potato & Red Pepper Soup

A great winter warmer. Makes a good starter, also good for a hearty packed lunch.

Method

  1. Peel and slice the sweet potatoes into discs about a half centimetre thick.
  2. Put the sweet potoatoes, onions, red pepper and cumin into an oven proof bowl and pour over the olive oil.
  3. Roast in the oven at 200C for about 45 minutes until all the ingredients are soft.
  4. Put the cooked vegetables into a blender and add the hot vegetable stock. Blend to a liquid and serve. Add more vegetable stock if you require a thinner consistency.

    An absolutely delicious recipe and so easy to prepare. I already have a sweet potato and red pepper recipe, but the addition of cumin gives it a real kick!

    This is one of the best sweet potato recipes ever. The cumin gives it a nice curry-ish taste, I liked it but I think it would taste nice without cumin, too. Very easy to make!

    Yes very tasty soup, although I hadn't got any cumin in so I used curry powder. Will try it again though with the cumin, I imagine it just a milder taste. I cooked it on the hob too, much less hastle!

    Good for using up veg. I will also do it next time on the hob unless already using oven dicing potato smaller to cook quicker. Nice thick soup, not being veggie I used half veg stock and half chicken stock. Well received.

    I have made this soup lots of time with and without Cumin, I do it on the hob, turning the veg in a little flora before adding the stock, great results everything :)
