  • 4 boneless, skinless salmon fillet, about 550g/1lb 4oz in total, cut into chunks
  • 2 tbsp Thai red curry paste

  • 2 tbsp white wine vinegar
  • 1 tsp golden caster sugar

  1. Tip the salmon into a food processor with the paste, ginger, soy and chopped coriander. Pulse until roughly minced. Tip out the mix and shape into 4 burgers. Heat the oil in a non-stick frying pan, then fry the burgers for 4-5 mins on each side, turning until crisp and cooked through.

  2. Meanwhile, use a swivel peeler to peel strips of carrot and cucumber into a bowl. Toss with the vinegar and sugar until the sugar has dissolved, then toss through the coriander leaves. Divide the salad between 4 plates. Serve with the burgers and rice.

Very easy to make, holds together well and fries up nicely. I only used a spray of oil so they were extremely healthy. I only had madras paste so I can't say if the actual recipe is better, but they were full of flavour. I can't wait to get some Thai paste in!

Not the hugest fan of these..I found it quite difficult to make them hold together into a burger so had to add quite a lot of breadcrumbs which I feel spoilt the "healthy factor". Nice flavour that grew on me though.

Delicious - very tasty and a nice change. My husband loved it! Only thing is I couldnt get them to keep their round shape. As soon as I tried to flip them over, they just fell apart.
Still tasted fabulous though. I used green thai paste as I dont like very spicy food, still had a nice kick to it though; very tasty and will try them again.

I am just about to make this for the second time. They are amazing! I made them with sticky rice, I do have to say that it would be better with 2 of the burgers as 1 wasn't quite enough for a filling meal. But really great, I'm just going to double the recipe!

Burgers are light, tasty and very easy to make, so is the salad. Served the burgers with soured cream and french fries.

This has become a weekly recipe. I add sweetcorn to the mixture and use rice vinegar for the salad. They hold together well but care has to be taken not to add too much soy sauce. I also dust them with flour before frying them.

Just rustled these up for dinner. Great flavours. Found they didn't hold to well but when placed in the frying pan they bound together. Served with fennel and cucumber salad (also on and rice.
