Sausage casserole with garlic toasts

Smarten up sausages and sneak in a few vital veggies too with this comforting midweek meal

Method

  1. Heat oven to 220C/fan 200C/gas 7. Put the sausages, pepper and onion into a roasting tin, then roast for 20 mins. Lower oven to 200C/fan 180C/gas 6, then tip tomatoes and stock over the sausages. Add sugar and most of the basil, season, then stir well. Roast for another 20 mins. Serve with garlic toasts, recipe below, sprinkled with the remaining basil.

Garlic and basil toasts

Cut a 400g bloomer loaf into 8 slices. Mix together 25g low-fat cream cheese, 1 tbsp butter, 2 crushed garlic cloves and 1⁄2 x 20g pack basil, roughly chopped. Lightly toast the bread on both sides, then spread one side with the herby mix and grill briefly until melted and golden.

Freezing sausages

Sausages will freeze for 1 month - defrost, cover and reheat in a medium oven for 20-30 mins.

    I made this for friends coming for mid-week supper - we all loved it! Veg cooked nice and soft, sausages nice and tasty, and really glad I did the garlic toast despite demands from the other half that mash would go better! Easy to make leaving time to gossip with the girls whilst it cooked :)

    Tried this a few months ago with great success,the kids loved it and we have done it several times since.I even managed to get my daughter to eat the peppers.We also add a leak to it and some garlic.Its a simple dish that can really warm you up on a cold day.

    Great mid-week easy recipe. I used Vegetarian Lincolnshire sausages and for quickness, pan fried them in Olive Oil fried first with the onion and peppers. I then added the rest of the ingredients including a little chilli and red wine as recommended above. I also added some green lentils which made the sauce a bit more substantial. Froze the leftovers for a 'shove in the microwave' lunch. Perfect!

    Didn't turn out as well for me as some of the other posters, I found the onion still a bit crunchy and the sauce a bit watery. But a great idea so next time I think I will just make it on the hob so I have more control.

    I've made this a few times now (with quorn sausages) and it is very popular. Once, by accident, I picked up a tin of the chopped tomatoes with chillies and this works even better.

    This is a great recipe. I used red, yellow and green peppers and also added some red wine as suggested by others. I reduced the stock to 200ml to account for the wine and I cooked this in a casserole dish on the hob. Fantastic flavours and the left over sauce was great over pasta.

    Try changing the type of sausage to find your own taste, also add a chopped courgette and using different types of fresh tomatoes make for a different taste too.

    i love this recipe. i make very similar just adding few drops balsamic vinegar and no stock. you can skip peppers. you can also substitute tin tomatoes for fresh cherry ones! roast in the over untill nice and sticky.... YUMY! i like it with rice....

    The first time I made this it was a bit watery and didn't go down that well with my tribe, but I decided to give it another go and this time added some red wine and chilli powder and whizzed the sauce ingredients through the blender, it made all the difference and there was clean plates all around this time. Oh and I used half the amount of onion aswell.

  • 1 yellow pepper , deseeded and chopped
  • 4 red onions , cut into wedges
  • 400g can chopped tomatoes
  • 250ml vegetable stock
  • 1 tbsp x 20g pack basil (use the rest in the toasts)
