Method

  1. Cook the bowtie pasta in boiling salted water as per packet instructions. place the pine nuts on a roasting tray and brown in a moderate poven for 5 mins, but keep an eye on them as they burn easily. When the pasta is cooked, add the pesto, peas, pine nuts and spiinach. Season and taste. Depending on the pesto used, you may need to add a lttle more oil, lemon juice or grated pasrmesan.

  • 2 cups frozen petit pois peas, defrosted
