Halloumi salad with houmous dressing & pitta crisps
A quick and colourful supper for two with a Middle Eastern feel

Ready in 20 minutes- Heat the oven to 180C/fan 160C/gas 4. To make the pitta crisps, separate the pittas into 2 halves, cut into triangles and bake for 5-10 minutes until crisp. Toss the tomatoes, onion, and cucumber with 1 tbsp olive oil and the lemon juice.
- Sprinkle the halloumi with a little oregano then grill or fry until golden. Mix the houmous and yoghurt with a little water to make a dressing and season. Toss the halloumi with the salad, drizzle over the houmous dressing and serve with the pitta crisps.
