Carrot & coriander soup

Everyone loves this super healthy soup, perfect for an easy supper

Method

  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.
  2. Tip into food processor with the coriander. then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

    Carrot & Coriander soup has always been a firm favourite in our house, although when I make it, I don't add onion. A pinch of powered garlic & sea salt really add to the flavour though. Also the very best stock you can find should be used, I love using Polish soup stocks that are so readily available these days.

    I have made this several times now and even made it in my slow cooker for when we came in at night I now add 2 celery sticks chopped At the end I fry the crushed coriander and a celery stick chopped fine, with the tops in a little butter and then add it at the end of cooking. Topped with a few coriander leaves

    This soup is now a firm family favourite with us. I have made it many times and it never fails. I also use my beloved stick blender and blend everything right there in the pot. Yummy soup!

    Made this soup. Fantastic. Only just started to make soup and this was so easy and very tasty. All the family liked it. I didn't add the fresh coriander but it did not affect the soup at all. Will definetly do this again!!!

    This soup is really easy to make, and tastes delicious. There was just enough for my fella to take to work in his flask the next day aswell, and it was a really chilly morning that morning, so as he works outside it should warm him up a treat. I will definitely be making it again. Recommended to all:O)
