Courgette soup

Low fat, very tasty easy to make soup.

Method

  1. Boil kettle
  2. Top and tail courgettes and chop up
  3. Put into a large pan and fill water to 2 inches over courgettes ( you can put as much or as little water in as you like, depending on how thick or runny you want it ! ) Bring to the boil
  4. Put the 4 vegetable stock cubes in and stir, then simmer and add as much white or black pepper as you desire.
  5. Stir occasionally or until courgettes have softened, add more water if you want to. Bit by bit put cheese triangles in. Blitz or leave chunky, enjoy!!

    This one looks easy but I would only use organic vegetable stock (they can make soups a bit too salty and always tasting the same..)

    How simple and easy!! AND light! I get AnaNoMar's point about the salt bit: didn't add any and it is salty enough! I am going to add a potato cut up into tiny cubes: it absorbs a bit of the excess salt and will fill me up a bit more. But all the credit to you Willis: lovely!

    A lovely and light soup. I added some vegetarian hard cheese and a chilli. So quick and easy!
