  • 4 skinless chicken breasts

  1. Heat oven to 200C/fan 180C/gas 6. Put the chicken into a medium roasting tray, then rub with the harissa, oil and oregano.

  2. Cover with foil and roast for 5 mins, then remove the foil and add the cherry tomatoes and olives to the tray. Roast for 10 mins more until the tomato skins start to split and the chicken is cooked through. Serve with boiled new potatoes

Quick and tasty. Left chicken in for about 25 mins and it was perfect, so definitely leave it in for longer than 15! Served this with couscous instead of potatoes and was delicious!

This recipe is way out on the cooking time which is why I have given it a 2-star rating. It took at least 45 minutes for the chicken to cook through properly. I would advise adding the tomatoes and olives only when you are sure the chicken is cooked through otherwise you will end up with tomatoey mush.

I love this recipe. It's quick, easy, and flavourful. It's also really healthy. I'm following Weight Watchers and this is low in points for me but tastes so good!

A really simple and tasty dish. I agree with the comments below that it needs cooking for longer than the stated time. I cooked the chicken in foil for 30mins, before unwrapping and adding the tomatoes & olives for a final 10mins; the chicken was moist and tasted great. I also added slightly more Harissa than stated, and served together with the Skinny Carrot Fries recipe that you can find on this site. Will definitely be making both dishes again!

Does this recipe need pre-cooked chicken? The meat was uncooked and needed an extra half an hour.

Excellent! I omitted the olives as we don't like them. I also increased the cooking time to 15 mins before adding the tomatoes.

My husband made this, it was amazing! I don't like olives so he used mushrooms instead and served it with baked potatoes flavoured with butter, oregano and peri-peri salt. Sooo good!

absolutely delicious recipe, lovely, healthy, fresh flavors. I've served once with cous cous and once with brown rice. I also seperately roasted some butternut squash which went deliciously with the chicken. it definitely needs longer 15mins though! oh and I went with the other tips on here and used double the harrisa. I bet this would be nice with salmon?

Made this a couple of times now, using lemon Harissa pasta and adding extra veg to the tray (peppers, courgettes etc). Real favourite and a delicious, quick supper. Served with roasted sweet potato.

Absolutely delicious! I cubed the chicken, and used a pack of olives with feta. Took much longer than the 15mins, I ended up cooking for 45mins, but despite this, the chicken was lovely and moist still. The feta had all but disappeared so next time will add 40 mins in. Will definitely be cooking this again, maybe adding mushrooms and red peppers to bulk it out (less carbs than potatoes!). Would also be fab with brown rice.

I made this last night, and I have to say it was just fantastic. Beautifully moist chicken breast, punchy flavours and perfect for a hot summer evening. Served it with the bruised potatoes and olive oil that comes with the suggestion. Perfect, easy and very tasty! Give it a go!!! Can't wait to do it again! X

Really, really nice!The harissa goes very well with the chicken!! I normally have a couscous and sweetcorn salad on the side from a different recipe and the whole thing is just delicious!!!!

Couldn't be easier to make and perfect for a week night after work. The cherry tomato and olive mix works really well but I have made this several times now and used whatever vegetables I had. Delicious and highly recommended.

It was ok - pleasant, but not something I will be making again.

I marinated the chicken in the harissa for a couple of hours, and served with roasted sweet potatoes, courgettes and peppers.

It was alright, but it wasn't particularly enjoyable.

This was nowhere near being cooked in 15 minutes. Allow 30 minutes at least and possibly 40 depending on the size of your chicken breasts
