  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.

  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

This has become one of my husband's favourites. Very easy to make and is quite versatile if you want to add anything different. I have added mushrooms, baby sweetcorn, yellow peppers and mange tout. Colourful and full of flavours!

I found this recipe in the good food calendar - it's absolutely delicious! I ommited the tomatoes as I personally don't like them and it still worked perfectly. Balsamic vingear is a lovely touch!

Delicious apart from the potatoes which were still raw despite following the recipe to the letter - I even cut the big ones in half as suggested in the recipe!! May par-boil next time to be on the safe side! Also served with Delia's cheat hollandaise which was perfect as I think this dish does need some kind of sauce.

Agree with the Majority, this was really tasty and easy to do.
As I didnt have any basil leaves I put some pesto on top of the salmon and didnt use as much oil.

So easy and so tasty. The asparagus got overdone because my salmon was quite chunky so I'll put it in later next time. The potatoes are amazing with a mayo dip!

I believe the beauty of this dish is the simplicity and ease of making it. When eating I did have a problem with tomatoes exploding as they were cut and making a bit of a mess of the tablecloth. Overall I think a great spin on a roast, but admit it needed the addition of herbs whilst cooking to give the veg and potatoes a little more flavour.

Very easy to make, the balsamic vinegar compliments the vegetables surprisingly well. Might try it with chicken next time.

I tried this last night, and was amazed at how little preparation was needed, and how easy the recipe was. I served it with corn on the cob, and both I and my husband enjoyed it, and he also commented on how well presented it was (not difficult, just dished out from cooking dish!)

This was great for a spring evening. Extremely easy to do which I love. Only thing I would change for next time is adding a splash of lemon juice to bring out the taste of the salmon fillets before cooking. I added giant watercress for an extra health boost. My husband says that he would prefer the asparagus to have less cooking time. Definitely a keeper. :-)

We bought a side of salmon in a special offer deal and portioned it up and packed it into the freezer, using some for this meal. It was our Good Friday special and was super; definitely flagged as "do againable" in our household ;-))
Our asparagus was very fine, so we steamed it lightly instead of roasting it.
I think I will try the courgette, lemon mayo and other suggestions as variations!

Everything that you could want from a seasonal main dish. Stylish, fresh tasting, easy to do and very little washing up! Added the whole bundle of asparagus - not just 8 spears. Served with a green salad as a special dinner not an 'everyday dish'. Fab!
