  • 2 salmon fillet, about 140g/5oz each
  • handful basil leaves


  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.

  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

This wsa delicious! Bought salmon to cook a spicy salmon recipe I had done previously When searching for the recipe found this one and by chance had also bought some reduced asparagus so it seemed meant to be!

I took account of comments made previously and added the asparagus about five minutes before the salmon and tomatoes, and was generous with the balsamic.

So easy, so delicious, and easy on the washing up!

Will definitely do this again and may even add basil next time (didn't have it in but the flavour didn't seem lacking because of this)

Try this - you won't be disappointed.

Was really easy to make and tasted lovely, I added sweetcorn for a bit of colour, mushrooms, and parsley sauce poured over the top, will definately be making this again!!

Great recipe. I boiled the potatoes whilst the oven heated up to speed up the cooking time as it was mid-week. Would definitely make again.

I'm not a massive fan of Stilton, but made this as a way of using up some that was left over from crimbo. What can I say- this recipe couldn't be any easier, and something magical happens to that cheese when you put it in this soup- it makes it so creamy and tasty- no seasoning required! Will definitely make again.

Very easy to make, used Tesco's microwave potatoes with herb butter (not cooked in microwave but cooked as per instruction). Also poured vinegar over salmon and it tastes excellent. Will definately use this recipe again.

Takes some time, but very easy to make. And also important almost no washing-up. ;-)
Taste very good. Though i like to ad some spices and seasoning. For example spread some horseradish onto the Salmon.

I cook this dish every week and it does not need anything changing or sauce added there is enough sauce with the balsamic vinegar. It is simple and tasty.

This is delicious...great for dinner parties. I found that using the larger asparagus better as the smaller cooks too quickly. Friends loved it!

I was excited to make this after all glowing reviews but neither myself nor my oh were overwhelmed. Everything was cooked well (followed the advice about not needing the asparagus is as long) and there was a surprising amount of sauce. I made a lemon mayonnaise to go with, perhaps that was what didn't quite work? Will make again as quick to prepare and reasonably healthy but have lowered expectations!
