  • 450g butternut squash, peeled and cut into small chunks
  • 1 garlic clove
  • 2 tbsp olive oil
  • 500g pack gnocchi
  • 200g young leaf spinach
  • 100g goat's cheese

Method

  1. Heat oven to 200C/fan 180C/gas 6. Tip the squash into a roasting tin with the garlic and oil, salt and pepper and mix well. Roast for 20 mins, shaking the pan halfway through, until tender and golden.
  2. Meanwhile, boil the gnocchi according to pack instructions. With a few secs to go, throw in the spinach, then drain the gnocchi and spinach together. Tip into the roasting tin, then mix everything together well, mashing the softened garlic. Spoon onto warm serving plates, then crumble over the cheese to serve.

Very good, very easy. Didn't have gnocchi so used penne pasta instead. A real winner though and very pretty. Also added more garlic as people above - it did seem to need it!

Absultely scrummy! Add a bit of extra garlic if you are a garlic fiend like we are! We used a different type of squash as that is what we had in but the combination of flavours was lovely.

very tasty. Very easy, and works with some ready made pastas too. It's jam packed with flavour and it's very quick if you use ready made gnocchi!

Such a simple recipe, you wouldn't believe how gorgeous it tastes when all combined. Made with two cloves of garlic and subsituted feta for goat's cheese (personal preference) and it's just delicious. To serve four, I actually use a whole KG of squash as otherwise it's a bit on the mean side. Plus I find in my oven it needs about 30 mins roasting. My non-veggie hubby adores it too.

Not a fan of this at all - all the individual components were lovely, but they didn't seem to go together well - there was too much going on. I'd think about doing this again, but perhaps without one of the squash or spinach.

Love this- made it a couple of times for dinner parties and so easy and looks great, delicious. For meaty guests added some grilled lamb cutlets as well which went down well. A def. new favourite

Made this in the caravan and it was a huge success - worried meat loving hubby might not approve, but the whole family loved it.

Simple, beautiful to look at and truly delicious! I was slightly concerned that this would lack flavour (due to the absence of herbs, etc), but stuck to the recipe and my faith was rewarded. This will be a regular in our house from now on!

Really tasty, I also roasted extra garlic. Gnocchi just seemed to absorb all the flavours. Will definitely make this again.

Didn't have any gnocchi so used pasta instead. The ingredients were delicious but I felt it needed some kind of sauce to bring it altogether. Maybe it would have gone together better if I had used gnocchi.

It really was a question of being almost too pretty to eat, but once we gave in it was absolutely delightful.

Really quick easy evening meal. I roasted more garlic with the butternut squash (purely because I love roast garlic) and it seemed to add a lovely depth of flavour.

Also held some of the spinach leaves back and served them raw on the plate.

Will definately be making this one again!

Beautiful colours and full on flavour. Very quick to make. Substituted sweet potato for the butternut squash.
