Ingredients

  • 1 tbsp olive oil
  • 2 carrots, chopped
  • 1 large onion, finely chopped
  • 1l vegetable stock
  • 400g can chopped tomatoes
  • 200g frozen mixed peas and beans
  • 250g pack fresh filled tortellini (we used spinach and ricotta)
  • handful of basil leaves (optional)
  • grated parmesan (or vegetarian alternative), to serve

Method

  1. Heat oil in a pan. Fry the carrots and onion for 5 mins until starting to soften. Add the stock and tomatoes, then simmer for 10 mins. Add the peas and beans with 5 mins to go.
  2. Once veg is tender, stir in the pasta. Return to the boil and simmer for 2 mins until the pasta is just cooked. Stir in the basil, if using. Season, then serve in bowls topped with a sprinkling of Parmesan and slices of garlic bread.

I did quite like the soup but to be honest I'm not sure about the amount of time it takes. Not long in soup terms but this stuff cooks in less than 5 mins usually so seemed more hassle than it was worth. I would probably make it again - but only to make a pack of pasta go further really.

This is filling and healthy, great with the Garlic bread and suits my children too after a day at school.

So easy and tasty. We always make a double quantity of the sauce and freeze half before adding the pasta, then we can have it twice for the effort of cooking once.

I made this for my hungry student flat of 8.
This meal was quick, so easy to make, healthy and the ingredients were all cheap.
Also, it went down an absolute treat with the house and despite making more than the recipe said was required it was all finished!
Very tasty.

I changed the recipie a little... I added garlic, celery and a touch of tomato puree. A real "hearty" soup - delicious

Loved this recipe, quick and easy. I also threw in a courgette.

Didn't have beans, so only used peas. No parmesan either, but still a hit.

This is delicious and filling. I added a chilli and some garlic and a spoon of marscapone. Very nice

Definately a winner! Easy to make and tastes great. I made this for my family-in-law and they were very impressed - i didn't tell them how easy it was!

I loved this! So easy to make and the flavours are lovely. I used a spoonful of pesto to replace the basil and thought it worked really well. And the cheese is great sprinkled on top. My bf had a portion without the pesto and chesse and thought it was lacking flavour so I'd recommend adding them.

great base soup recipe, easy to adapt. found using filled pasta way too stodgy so tried with a few mini pasta shapes.... much better!

Personally I did not understand why such high ratings for this recipe. I would say it was average. A nice lunch to take to work on a cold day but not for an evening meal. On a positive note, its very low in sat fat and it fills you up so would reccomend if someone was on a diet. Just a little bland for me, maybe add some garlic or more herbs?

I've made this many times - it's a quick and easy lunch or supper dish. A pinch of smoked chili flakes and a generous tablespoon of mascarpone makes it a little more luxurious. Great served with the cheesy garlic bread recipe.

Superb - great use for a packet of fresh pasta that i often have lurking in the fridge! Have now made it a few times - great for tea and for a filling lunch at work!
Try with a variety of different pasta fillings and veg and ring the changes!
