  • 1 tbsp vegetable oil

  1. Heat the oil in a medium saucepan. Add the onion and cook for 5 mins or until softened and starting to turn golden, adding the garlic for the final min. Stir in the sugar, chipotle paste and tomatoes. Put the chicken into the pan, spoon over the sauce, and simmer gently for 20 mins until the chicken has cooked (add a splash of water if the sauce gets too dry).

  2. Remove the chicken from the pan and shred with 2 forks, then stir back into the sauce. Scatter with a little red onion, the coriander, and serve with remaining red onion, tortillas or rice.

This was very tasty, couldn't get chipotle pasta but added smoked paprika and chilli instead. Ended up rolling in wraps and turning into enchiladas in the oven. Will make this again, I imagine it could be used lots of different ways, like on baked spuds or with pasta. Yum

Really tasty and healthy, just added ground coriander, ground cumin, paprika, 2 tsp of chipotle, splashes of worcester sauce and tabasco. Cooked chicken slowly in the sauce just on the hob, came out succulent and juicy, absolutely delicious!

Unfortunately its a no from me. Smelt great while cooking, however, even after adding double the amount of chipotle paste (Tesco) it was still very bland. There may well be ways to improve the recipe but I wont be making any attempts myself.

A very quick, easy and delicious recipe. I added peppers and chick peas to mine which added an extra element, next time I think I will try adding celery and lentils and see how it turns out.

Made this for dinner last night and was very tasty and very quick. I found a tesco own brand paste called chipotle chilli & smoked paprika paste and it worked perfectly. It's part of their "ingredients" range. I also added some sweetcorn for extra texture and served it with rice and creme fraiche.

Made this last night, it was very tasty! Have to agree with other comments re the amount of chipotle..I added 3 tsp. I used cooked chicken shredded which made it a very quick meal to prepare, served with chilli rice and beans...:)

Made this last night was very simple and very tasty! After reading other comments added 3 tsps of chipotle paste (found in Tesco ) and was very spicy for children so will only use 2tsps next time. Great low fat meal!

This is a firm favourite in our house! I use the slow cooker which makes it super easy.
Only changes I make is I use 500g tomato pasata instead of chopped and I add chopped red peppers and a few carrots along with the onion before adding to the slow cooker. Serve with salad and new potatoes. great if you're having people over for dinner- hasn't failed to impress yet!

Absolutely incredible and very simple, just had this one for dinner. I couldn't get the paste but I did use chilli poweder, cumin and paprika along with a bit of chilli sauce. I also added a bit more brown sugar than the recipe said. Left in the slow cooker for about 5 hours. Served in taco shells with a bit of cheese sprinkled on top...want some more now.

made this to the last letter of the recipe and it found it very disappointing, tasted of nothing in particular, just hot chicken, the sauce had no depth, won`t bother again.

Didn't really live up to expectations we found it just a bit boring really even though I used chipotle paste (found in Sainsburys) I served it in tortillas like a fajita with a dollop of creme fraiche it was ok but won't rush to make again.

Absolutely delicious and so simple. I used more chipotle paste than the recipe suggested, added 2 red peppers cut into batons and a bit of chorizo for extra bite. Served with Microwavable Mexican Rice and creme fraiche. Yum!

I made this for a friend and we added a potato to it to try to bulk it out a bit. We taste tested it while cooking and found it lacking in flavour so we ended up adding 2-3 more spoons of chipotle paste and a little more sugar. The finished product had little in the way of heat or flavour and was ultimately dissapointing. The tomatoes were at the end of their shelf life so perhaps I should blame them? The onions I used may have been bigger than required too?
My friend and I both agreed that if we had diced up a spicy sausage like choritzo or pepperoni and added that near the end the meal would have been a lot better.

I plan on trying this recipe again with a fresher can of tomatoes and no potato to see if that improves things, but Ill likely have a sausage on standby when I do.

Absolutely loved this really tasty and my faddy husband liked it too. I am definitely going to try this in the slow cooker next time. Plenty left too for another day. Yum!

Great recipe! I used Asda's chipotle, chilli and lime paste. I used three tsps of the paste and also a teaspoon of paprika and chilli powder! Instead of adding additional liquid I put another tin of tomatoes which gave it a nice texture and loved the shredded chicken technique! Served with Uncle Ben's Mexican bean rice which was a nice accompaniment!
I will definitely be making this again...Delicious!!
