Bobotie

Pronounced ba-boor-tea, the national dish of South Africa is a delicious mixture of curried meat and fruit with a creamy golden topping, not dissimilar to moussaka

Method

  1. Heat oven to 180C/fan 160C/gas 4. Pour cold water over the bread and set aside to soak.
  2. Meanwhile, fry the onions in the butter, stirring regularly for 10 mins until they are soft and starting to colour. Add the garlic and beef and stir well, crushing the mince into fine grains until it changes colour. Stir in the curry paste, herbs, spices, chutney, sultanas and 2 of the bay leaves with 1 tsp salt and plenty of ground black pepper.
  3. Cover and simmer for 10 mins. Squeeze the water from the bread, then beat into the meat mixture until well blended. Tip into an oval ovenproof dish (23 x 33cm and about 5-6cm deep). Press the mixture down well and smooth the top. You can make this and chill 1 day ahead.
  4. For the topping, beat the milk and eggs with seasoning, then pour over the meat. Top with the remaining bay leaves and bake for 35-40 mins until the topping is set and starting to turn golden.

    I made this by accident!! Was supposed to be making curried meat balls but with the kids screaming for atttention and my mother ringing at the crucial moment I automatically started to fry the mince before I had made meat balls. I then thought about turning into a spaghetti dish so added a jar of jamie oliver's pasta sauce with garlic, toms whole olives and capers. Then I realised we were having pasta the next night so i frantically searched good food for a non-spag bol tasting mince dish and found this. I added mushrooms, paprika, sultanas, a few chilli flakes and used a tikka masala paste as thats all I had. Although it probably tasted nothing like it should it worked really well, the texture is lovely with the added bread and it was delicious, even my son who doesnt normally like mince dishes had two helpings. I will make it properly next time but would add a nice cheese (not cheddar) to the egg mix x

    I tried this recipe this evening and have to agree it is a gorgeous meal. I used half the amount of mince and onions but kept the rest of the ingredients the same except the all spice berries which I was going to substitute with a pinch of ground all spice but forgot to add to the meal. I bought Mrs Balls chutney from Sainsburys which I used. We had this meal with the tomato salad and yellow rice. Loved the salad which was very refreshing with the spice bobotie but wasn't so keen on the rice, which needed cooking longer that the recipe stated. Will definitely cook this again.

    I was really surprised how nice this was. Was a bit worried with all the different spices, but it gave the dish a really special flavour. We really enjoyed it, so this is certainly one to make again.

    Loved this. NOt much for words but the reason i try these recipes is based on other peoples reviews and i am sure others do the same. So give it a go its just as good the day after...so says my wife.

    Tried this recipe and it is very nice but I found a better one on the Nigella Lawson site, you don't need herbs or allspice and it comes out moist and perfectly spicy with the combo of apricot jam, Mrs Balls chutney and curry powder. Also, use some tumeric in your egg topping to get a good yellow colour - works well if you chuck a bit into your rice just before you take it off the stove for beautiful yellow rice.

    I leave the bread and all spice berries out of the recipe. I always use lamb too, much tastier than beef!! I use spiced onion relish by English provinder which works really well. Fab dish, reminds me of being on my honeymoon only last month, brings back great memories!!

    This is a delicious recipe. Had to change it slightly, as couldn't, like others before, find all spice berries and used apple and rosehip jelly, instead of mango and peach. I found a good slug of fino sherry, while frying off the mince, added a good nutty flavour. Cooked it all on the same evening but liked the fact that it could be left overnight and finished off easily with the egg custard topping. I shall definately be cooking this dish again but will try to have all the original ingredients. Served this dish with pan fried sugar snap peas and fine plain noodles.

    What a fantastic recipe! I only used half the quantity of beef and supplemented with more bread. Like other, I didn't have allspice berries so used some mixed spice instead. We all loved it and I will definitely be making this again!

    have made this twice great recipe seved with yellow rice and apricot blatjang did use mrs balls chutney first time but it was a bit to sweet for us

    Lynn it makes abig difference to the taste ,if you can't get berrie's.It's ground pimento.I use 1 level teaspoon.Hope this help's.I got the pimento from tesco's.

    Probably the best recipe I've ever made from Good Food. I used Balti curry paste and raisins as I didn't have any sultanas. Will definitely make this again and again.

    This is an awesome dish. The blatjang tastes awful on its own, but compliments the dish superbly. One small adjustment I've made taking my lead from The Hairy Bikers, is to put a tblsp of curry powder into the egg custard. Try it, you'll like it.
