  • 5 soft sun-dried or SunBlush tomatoes in oil, roughly chopped
  • 3 x 400g cans plum tomatoes
  • 500ml turkey or vegetable stock
  • 1 tsp sugar, any type, or more to taste

  • 125g pot fresh basil pesto



    Pesto is a generic Italian name for any sauce made by pounding ingredients together.

  1. Heat the butter or oil in a large pan, then add the garlic and soften for a few mins over a low heat. Add the sun-dried or SunBlush tomatoes, canned tomatoes, stock, sugar and seasoning, then bring to a simmer. Let the soup bubble for 10 mins until the tomatoes have broken down a little.

  2. Whizz with a stick blender, adding half the pot of soured cream as you go. Taste and adjust the seasoning – add more sugar if you need to. Serve in bowls with 1 tbsp or so of the pesto swirled on top, a little more soured cream and scatter with basil leaves.

This is by far one of the most delicious soups I have ever tasted! Just as good with creme fraiche as it is with sour cream!

This is ridiculously easy for something so tasty! I had made my own basil and rocket pesto the night before and it went perfectly with this soup. The only difficulty I came across was stopping myself eating all the sunblush tomatoes before they got into the pan.... yum!

A gorgeous soup. I only used half the amount of sour cream recommended and it was still lovely, rich and creamy. A winner at our table and so easy to make.

Very very tasty indeed. The pesto adds a lovely tang. I haven't cooked in years and am being 'forced' into it as part of a Come Dine With Me exercise with friends.

Really simple and so tasty. A great starter for a dinner party. I replace one can of chopped tomatoes with one can of cherry tomatoes, it adds a nice sweetness to it.

Brilliant. Really easy to make and delicious. Have made it a few times and also substituted the soured cream for creme fraiche which is just as nice. Firm favourite now.
