  • 1 tbsp butter or olive oil

  • 5 soft sun-dried or SunBlush tomatoes in oil, roughly chopped
  • 3 x 400g cans plum tomatoes
  • 500ml turkey or vegetable stock
  • 1 tsp sugar, any type, or more to taste

  • 125g pot fresh basil pesto



    Pesto is a generic Italian name for any sauce made by pounding ingredients together.


  • basil leaves, to serve


  1. Heat the butter or oil in a large pan, then add the garlic and soften for a few mins over a low heat. Add the sun-dried or SunBlush tomatoes, canned tomatoes, stock, sugar and seasoning, then bring to a simmer. Let the soup bubble for 10 mins until the tomatoes have broken down a little.

  2. Whizz with a stick blender, adding half the pot of soured cream as you go. Taste and adjust the seasoning – add more sugar if you need to. Serve in bowls with 1 tbsp or so of the pesto swirled on top, a little more soured cream and scatter with basil leaves.

This is such a gorgeously rich and rustic soup! I am so proud I was able to make food that tastes this good from scratch! Thanks so so much for the recipe! Easily the best tomato soup I have even made or eaten! I didn't bother with the swirl of cream to finish so I could add a few Italian croutons - favourite dinner in a long long time!

This is the best tomato soup I've ever made (I've tried at least 10 different recipes throughout the years). It has the same lovely consistency as a certain beloved tinned tomato soup, but it is much more intense in flavour.

Delicious - this one's a keeper. I used almost double the sundried tomatoes because I had some to use up and I didn't use pesto, just whizzed in a good handful of fresh basil leaves. The recipe with these tweaks still produced a lovely rich tasting soup and I know I will make this time and time again.

this is the most gorgeous tomato soup and incredibly easy and satisfying to make!! cost less than £1.50 to make at least 4 portions (used sainsburys basics chopped tomatos in cartons - 31p each), i am so pleased to have found this recipy!!

So easy and tasty. I used homemade beef bone stock, because I like to use real stocks, and it gives a superb rich savory taste. Didn't bother to add the sour cream to the entire soup as I want to keep it in the fridge and reheat it for lunches and I don't want to to split, instead I just swirl a blob through before serving.

Yum yum! Souper soup! - so easy to make and from 'store cupboard' ingredients. It's definitely the sun blush tomatoes which give it the rich flavour. Haven't tried it with the pesto yet as I didn't have any the first time I made it and it was delicious without. Will try next time.

YUM! Substituted some real tomatoes in place of one of the tins, and it worked brilliantly! Tomato soup can often be quite boring, but this one definitely was not, and can't wait to make again:)

Made this for lunch and it was quick, easy and delicious. Also made into red pepper and tomato by adding the best part of a jar of roasted red peppers at the end before blitzing which was excellent too. A great standby from store cupboard ingredients.

Fantastic. Used a bit of double cream in the recipe and at the end in stead of Creme freche as had run out. Added 2 red chillies for a bit of heat. Best tomatoe soup I've had.
