  • 100g softened butter, plus a little extra for greasing
  • 140g caster sugar
  • 1 beaten egg
  • 225g plain flour
  • 2 tsp baking powder
  • 4 very ripe bananas
  • 85g chopped walnuts
  • 50ml milk

Method

  1. Heat oven to 180C/160C fan/gas 4. Grease a 2lb loaf tin with some butter and line the base with baking parchment, then grease this as well.
  2. In a large bowl, mix together the butter, sugar and egg, then slowly mix in flour and baking powder. Peel, then mash the bananas. Now mix everything together, including the nuts.
  3. Pour your mixture into the tin and bake for 1 hr, or until a skewer comes out clean. Allow the cake to cool on a wire rack before removing from the loaf tin. The loaf can now be wrapped tightly in cling film and kept for up to 2 days, or frozen for up to 1 month. Defrost and warm through before serving. Serve in thick slices topped with vanilla ice cream and drizzled with a little Easy chocolate sauce (see recipe, below).

Love banana, love walnuts. Excellent.
For those claiming its dry... You over-cooked it. If it collapsed then you under-cooked it :) sprinkle a cinammon and sugar mix on top before baking it. Trust me!

Very good. I forgot the milk - batter still seemed OK. Cake splits - protect top next time. Took 1hr 30 min in my oven

Same as the first poster... where/when do you use the milk??? It tasted nice and was a good treat instead of having a chocolate bar instead.

Love this recipe - I seem to often have some over-ripe bananas and this is a perfect use for them. Nice with or without sauce/icecream. Easy recipe. Yum!

A really easy to follow and bake recipe with a very satisfying result: a moist and tasty banana loaf. I had a couple of over ripe bananas ( so only used 2 & not the recommended 4) & usually make a banana cake. Don't have a favourite receipe but do now!

Really nice, dead easy too. I used up a load of bananas we had and was delighted at the result! Added a bit of chopped chocolate we had in the cupboard and some pecans and walnuts. Going to try some mixed dried fruit next time.

Great taste......for grownups. I added choc chips but the kids did not like the walnuts. Would try sweeter nuts next time. However great texture and looked the part. Bit crumbly when I sliced it, but it was still quite warm.

I made this banana loaf last month and then again today.
The 1st time I made it I followed the recipe but I found the mixture a bit too runny, and when cooked, the texture was not great.

Today I only added 2 bananas as I don't like an overpowering banana taste and also used brown sugar rather than white, which gave the cake a more sticky texture. I used less milk and the mixture was nice and thick and also added some extra walnuts. Much nicer :)

Great Banana Bread! Tasted fab! Chidren loved it! So quick to make too! Never made anything like this before so a real Baptism by Fire!! Had no white sugar- only Demerara...no problem! Used 4 very old bananas & simply squashed in fingers as added- no mashing! Added a bit of milk at the end of mixing! Easy peasy!

Worked very well. I added some grated coconut and a teaspoon of vanilla essence to the bananas before I mixed them in the rest of the ingredients. Added a nice little extra sweetness.

Sorry Greg but this is not the best. I have made a few banana loaves over the years but I won't be making this one again. It tastes ok but the appearance and texture are not good. I'll stick to my old recipe from now on.

Made this with my sister, our 4 banana's were very large so it needed about 1hr and a half to cook through, wasn't mixed enough so next time i'll use an electric whisk rather than a wooden spoon.. Maybe i'll use 3 large ones instead next time! We didn't put in the walnuts and it still turned out fantastic!! It was eaten in less than 2 days! Making it again this weekend, just waiting on the bananas to ripen :) So easy, highly recommended!

Made this yesterday & had a slice this morning. Yum! Will be making this again. My husband bought me one of these square silicone tins so I used this instead of a loaf tin. Didn't need to line or butter the tin, baked it for the hour stated & it cooked beautifully.

I found the suggested four bananas made the loaf a bit heavy and stodgy and the loaf seemed to crumble too easy when cut - tried it with one an half quite large bananas instead and around 65ml of milk rather than the 50ml and it was lovely. so easy to make!
