Ingredients

  • 400g penne
  • 1 tbsp olive or sunflower oil
    Sunflower oil

    Sunflower oil

A variety of oils can be used for baking. Sunflower is the one we use most often at Good Food as…

  • 454g pack good-quality sausage, cut into chunky pieces
  • 250g chunky chestnut mushroom, halved
  • 500g pack cherry tomato
  • 2 sprigs rosemary, leaves roughly chopped
    Rosemary

    Rosemary

    rose-mar-ee

Rosemary's intense, fragrant aroma has traditionally been paired with lamb, chicken and game…

  • handful flat-leaf parsley, chopped

Method

  1. Cook pasta according to pack instructions. Heat the oil in a deep frying pan, then fry the sausages and mushrooms for 5 mins until golden. Add the tomatoes and cook for about another 3 mins on a high heat until the tomatoes pop and start to form a sauce. Season to taste, then add the herbs and drained pasta and stir well.

This was an instant hit, especially with my 3 year old son who normally hates trying anything new. I'm cooking it for the second time tonight - so quick, easy and tasty. I added a can of chopped tomatos to give it some sauce and even managed to sneak in some home grown veggies.

I put a tin of chopped tomatoes in a baking tin with a crushed garlic clove and the chopped rosemary and baked on high for 20 mins for a quick concentrated sauce and then added it to the mushrooms and cherry tomatoes. It was very good and added a little extra sauce.

I made this last night for me and my fella, it was absolutely lovely and soooo easy to make. I halved all the ingredients as i was cookin it for two. My fella isnt too keen on Rosemary so i only added half a stalk. I would definitely make this again, and will keep it in my binder for easy access.x
