  • 400g can cannellini bean or other white bean

  • 2 tbsp red wine vinegar
  • 140g button mushroom, thinly sliced
  • handful flat-leaf parsley, coarsly chopped
  • 3 tbsp olive oil

Method

  1. Rinse and drain the beans, then pat dry with kitchen paper. Mix the onion with the vinegar and leave for 5 mins to soak. Mix the mushrooms and parsley into the beans, then add the onions and vinegar, oil and seasoning, then mix well.

  2. Arrange overlapping slices of chorizo over two plates and spoon the salad in the centre. Serve with crusty bread.

Made double this recipe as part of a birthday buffet with lots of other tasty salads. Everyone thought it was delicious and I agreed! None left at the end of the evening. I will definitely make this again - a nice one to add to the repertoire.

For a vege version (apart from leaving out the meat) marinate a few whole cloves of garlic in a liquor of EV olive oil and red wine vinegar for ca. 2 hours beforehand, then add to the rest as you're preparing it. Never use garlic without either cooking or marinating it.

I like a small amount of fresh rosemary in this type of salad, but I'm lucky enough to have a rosemary bush. Don't use dried herbs in a salad.

I think there was far to much red onion in this, so I just used half a small red onion and also added two gloves of crushed garlic. I used black eyed beans as didn't realise that I didn't have any cannellini beans. We really enjoyed it - anything with chorizo gets my vote!

Really tasty! Made this for a tapas night with friends including all the usual suspect dishes and this one was everyones favourite! So simple and moreish

I made this as part of a Tapas menu.
Wow, all in all it gives a delicious flavoursome punch!
I used both Chorizo and peppered Salami.
Will def make again!
A lovely little dish.

Message for Kermie!! Re the lack of garlic in the list of ingredients, it puzzled me for a moment too, but then it dawned on me that the garlic element must come from the chorizo!! I suspect it's probably dawned on you too by now.

Haven't tried it yet, but fully intend to very soon - looks scummy!

A little more seasoning would be great and perhaps some more beans but otherwise this was very tasty and quick to prepare too! Fab!
