Fudgy coconut brownies

Dense and gooey, these storecupboard treats are made with cocoa rather than bars of chocolate

Method

  1. Heat oven to 180C/160C fan/gas 4. Line the base of a 21cm square tin with baking parchment. Put the cocoa, butter and sugar in your largest saucepan and gently melt, stirring so the mixture doesn't catch. When the cocoa mixture is melted and combined, cool slightly, then stir in the eggs, little by little, followed by the flour and coconut.
  2. Tip into the tin and bake for 45 mins on a middle shelf - check after 30 mins and cover with another piece of baking parchment if the crust is browning too much. Cool in the tin, then carefully lift out and cut into squares.

    I've made these brownies twice now and they are delicious... and everyone else that's tasted them seems to want more than one, too!!!! I've got a fan oven and 45 mins seems to be perfect and I don't need to cover them either. Wasn't too sure to start about the amount of coconut but, the texture and taste are amazing. Quite possibly the best brownie recipe I've ever tasted!!!

    The brownies lovers in our house really liked these. The cooking time was perfect in my fan oven. Not really any taste from the coconut but it added very good texture.

    My husband loves chocolate and coconut, so these are the perfect indulgent treat. I only use half the sugar and they're still super yum. To make it obvious that they've got coconut in them, I cover the top with a chocolate ganache made with 50ml double cream and 50g dark choc then sprinkle on some more dessicated coconut before cutting them into squares.

    Look and smell lovely. Haven't tasted them yet as they are for a coffee morning tomorrow! It would have been useful to know how set or otherwise the centre should be. I felt mine weren't cooked through and gave them another 15 minutes. Maybe they were meant to be like that?

    Amazingly fudgy and yummy. Some of the brownies I have made have had an eggy smell which always bothered my Mom but these were wonderful they were gone in minutes.

    i didnt have any desiccated coconut so i just put in an extra 50 grams of flour which might of been a bit too much, i used plain flour instead of self raising so i was going to put in some baking powder instead ...in the end i forgot to put in the baking powder BUT they still turned out great, best brownies ever and are so simple to make as they dont have any chocolate. 45 mins of cooking was the perfect for this recipe as well! =D

    Just make these with my 9 year old son - very easy and lots of fun to make together. My son smacked his chops together lots whilst he licked out the bowl afterwards! In the oven now...

    I hate it when ppl post on here saying 'i made this recipe but added this and that etc etc' however i am going to do the same here I'm afraid.... didnt have enough cocoa powder (only had 10g) so increased the coconut by 50g and flour by 50g to try and make up... also added 100g plain chocolate in the melted mix for increased chocolate-ness. All worked really well although next time i wouldnt increase the coconut as the brownies are more coconutty than chocolatey. Nice and chewy and slightly crisp on the top... will use this recipe again i think! Im sure this recipe would be extra yummy if actually followed correctly!

    These were delicious. I had one problem...they didn't cook in the amount of time stated and I can see that nobody else had this problem (except one other baker!). Is it possible that I could have needed to put the gas up higher or maybe put the tin up higher in my fan oven. I don't normally have a problem with times stated, but this was really bad. I think they went in for an extra 40 mins...the middle just would not set. as I cut into it, it was running out.can anyone offer any advice as I would love to make them again! after this time is was still gooey, so i wasn't waiting for it to set solid!!

    Oh dear, what did I do wrong? The flavour was quite nice but I found the texture really lumpy & it just didn't seem to cook enough in the time as it came out very runny. I'm not sure I shall be trying this one again, though it seems to have worked well for everyone else!

    These tasted absolutely gorgeous and the recipe made plenty! I didn't think there was much of a coconut taste but it did change the texture of the brownies. I will definately be making again soon.

    this was easy and fun with my 2.5yr old. i made it in a 28 x 18cm tin and it was still a good size and height, though because the tin was not greased the edges weren't smooth where the lining paper buckled. tasted fab after 40mins, chewy edges and squidgy/fudgy middle. got great reviews from my friends.
