Salmon, broccoli & potato bake

A classic combination of flavours for a midweek family meal - make this recipe in just one pot

Method

  1. Put the potato wedges into a shallow microwave-proof baking dish, then cook on High for 10 mins until almost tender all the way through (turn the wedges halfway through to ensure even cooking). Add the broccoli, re-cover and cook for another 3 mins or until the florets just give with a knife. If you don't have a microwave, boil instead.
  2. Heat grill to medium. Mix the crème fraîche and mustard together with a little seasoning. Nestle the salmon in among the potatoes and broccoli, then spoon over the crème fraîche mix, making sure most of the broccoli is covered with sauce. Sprinkle with the cheese and grill for 5 mins until the sauce is bubbling, the tips of the potatoes are golden and the salmon is just cooked.

Buying salmon fillets

Salmon sold in packs normally has the skin still on. Buy it from the fish counter instead, and ask them to remove the skin, saving you the hassle when you get home. Make sure it is from a sustainable source.

    This is an outright winner, quick and easy, and very very tasty. I used parmesan shavings rather than grated, and the strength of the flavour worked really well. I also use more creme fraiche, about 100mls per portion. My 10 month old loves this dish, he never leaves anything!!!

    I never would have put fish and mustard together, never mind cooked it in a microwave, but this dish worked really well. Great for almost-too-tired-to-cook nights. I increased the amount of mustard....I'm glad I did, I think it might have been a bit bland otherwise.

    This is a great weeknight supper, although I am not keen on cooking potatoes in the microwave (plus like them to be crispy) so I parboil them, adding the broccoli at the end. I then finish the potatoes off in the oven before finishing the recipe off as above.

    Really enjoyed this and it's very easy to make. Not a brocolli fan, so replaced that with chunky-cut red peppers and some green beans. Worked perfectly. Would also use a little bit less mustard next time!

    Found the mustard very over powering & I used a slightly less amount thinking of this at the time. Dont think will do this again but if anyone thinking of doing it try using french or dijon mustard, the wholegrain too strong & doesnt go with broccoli in my opinion

    loved this meal, didnt use microwave tho, would cook in oven next time as my grill not that great, my 1yr old daughter loved this too will definately be making this a regular weekly dish

    My husband made this last night. I thought it was quite tasty, but a bit dry. Husband wasn�t very keen on it � he felt the mustard was too strong. I think I would use fewer potatoes next time and more broccoli as it was very potato dense and more vegetables would make it less dry. Also, it took longer to cook than it should have as husband made it in a casserole dish which just fitted in our microwave, but when the dish went under the grill, it needed to be more spread out in a shallower dish. We ended up having to spoon half of it into a shallow dish and put that under the grill and then do the other half afterwards. I would have this again, but hubby isn�t keen on trying it again.

    Marvelous quick food. I added quite a lot more creme fraiche (but half fat). Also the Salmon needed longer to cook through. Will definitely make this again

    I made this for the first time last night and hubby and I both loved it. I used low fat creme fraiche but used only half the amount and topped it up with skimmed milk - it was still nice and creamy but lighter. I also cooked it in the oven for 15 minutes rather than grilling as I was not too convinced about only 5 mins for the salmon to cook. Will definitely be making again.

    It was quick to prepare, & tasty, but took a lot longer than 10 minutes to cook, ie 15 mins in the microwave, then 10 in the oven. And my sons who normally love cheese didn't think the parmesan went well with this.

    Really simple and easy to make. I used 2tsps mustard so not too strong. I also crisped up potatoes in oven and the baked the entire dish for 15 mins rather than grilling. Much better result I think.
