Ingredients

  • 2 tsp cumin seeds
  • large pinch chilli flakes
  • 1 tbsp olive oil
  • 1 red onion, chopped
  • 140g red split lentils
  • 850ml vegetable stock or water
  • 400g can tomatoes, whole or chopped
  • 200g carton chickpeas or ½ a can, rinsed and drained (freeze leftovers)
  • small bunch coriander, roughly chopped (save a few leaves, to serve)
  • 4 tbsp 0% Greek yogurt, to serve

Method

  1. Heat a large saucepan and dry-fry the cumin seeds and chilli flakes for 1 min, or until they start to jump around the pan and release their aromas. Add the oil and onion, and cook for 5 mins. Stir in the lentils, stock and tomatoes, then bring to the boil. Simmer for 15 mins until the lentils have softened.
  2. Whizz the soup with a stick blender or in a food processor until it is a rough purée, pour back into the pan and add the chickpeas. Heat gently, season well and stir in the coriander. Finish with a dollop of yogurt and coriander leaves.

This soup is easy and delicious and has quickly become a family favourite. We add extra chickpeas just because I couldn't be bothered with a leftover half tin... I like it better with lots of chickpeas anyway. yummy!

Finally got around to making this and everyone (adults & kids alike) demolished bowlfuls of it. I did omit the chilli when cooking then we added our own chilli flakes when served so not too spicy for the kids. I also made in advance and only added coriander when reheating.Will definitely be cooking again.

I didnt use the yogurt, as i didnt have any, and decided to add more spice which worked brilliantly :)

Delicious recipe, blender was broken when I came to use it so couldn't puree the ingredients but I enjoyed it chunky regardless!

O M G. Love this soup. I added garlic to the recipe. Have made it 3 times this week. Easy to take to work. Familym think it's great. Had to add a little extra chilli for the hubby but still good.

This is a quick and easy storecupboard soup - I added the whole tin of chickpeas and also a splash of Thomasina Miers' 'Wahaca Habanero hot sauce' as I found it a bit lacking on chilli kick. Great.

Made the receipe numerous times, its absolutely delicious. I didn't use a red onion and it tastes just fine, also didn't have any greek yoghurt. I also use a full tin of chick peas, so I'm sure the calories will be about the same leaving out the yoghurt and using the extra chick peas, enjoy !
