Ingredients

  • 500g sweet potatoes, peeled and cut into bite-size pieces
  • 1 tbsp olive oil
  • 4 skinless chicken thigh fillets, each cut into large chunks
  • 1 large red onion, cut into wedges
  • 2 tbsp rogan josh curry paste
  • 2 large tomatoes, roughly chopped
  • 125g spinach

Method

  1. Cook the sweet potatoes in boiling, salted water for 5-7 mins until just tender. Drain well, then set aside. Meanwhile, heat the oil in a large frying pan, then add the chicken and onion. Cook for 5-6 mins until the chicken is browned and cooked through. Stir in the curry paste, cook for 1 min, add the tomatoes, then cook for another min.
  2. Pour in 100ml boiling water and mix well. Simmer for 5 mins, add the spinach, then cook for 2 mins until wilted. Fold in the potatoes and heat through. Serve with rice and naan breads.

i love curries and this is one dish that i would definetely like to be asble to cook to perfection.

So easy to do - added Madras paste (3tbsp for that extra kick) as that's what i had in the cupboard & added a couple of extra tomatoes, this was delicious.... served with naan and chapatis and i'm F.T.B :)

I made this for 7 people so I doubled all the ingredients and it was a complete success! Very easy to make and tastes really good. I added a half a table spoon more of the Rogan Josh paste but other than that all went to plan.
I served mine with boiled rice, flat bread (another recipe on here) and a mint greek yoghurt!

Didn't have any spinach so replaced it with curly kale.... BEAUTIFUL!!! A really colourful, great tasting dish.

Quite a nice curry but I found there wasn't enough sauce - perhaps I didn't use enough liquid

Loved it! Used half a tin of tomatoes instead and Pataks Balti paste - really delicious, the sweet potatoes really soaked up all the flavour

Second time I have made this. First time followed the recipe completely and it was lovely, tasted really fresh. Tonight I only had frozen spinach, a brown onion and canned tomatoes, but even though it was quite a different meal it was still great!

So tasty! As I am a student, and cooking for one person, I just divided the ingredients up for one person, and ate it without the rice. It was just as tasty, and i was full when I finished, I felt it didn't need rice.

Great dinner, a hit with everyone. I couldn't find rogan josh paste so used jalfrezi and doubled the recipe to feed 6. I also used the whole jar of paste (we love our curry sauce) adding an additional 100ml water with each 2 tblsp extra paste and an extra 2 tomatoes. Thanks for another family favourite!!!
