  1. Cook the sweet potatoes in boiling, salted water for 5-7 mins until just tender. Drain well, then set aside. Meanwhile, heat the oil in a large frying pan, then add the chicken and onion. Cook for 5-6 mins until the chicken is browned and cooked through. Stir in the curry paste, cook for 1 min, add the tomatoes, then cook for another min.

  2. Pour in 100ml boiling water and mix well. Simmer for 5 mins, add the spinach, then cook for 2 mins until wilted. Fold in the potatoes and heat through. Serve with rice and naan breads.

Another great recipe, I was very happy with this. I will definitely use it again.

I served the meal up with rice.

I don't use sweet potatoes much usually, so they always add a special touch to a meal. The spinach added to the colour of the meal too.

To make the dish more suitable for young kids, I only used half as much curry paste as recommended. It did lose some taste as a result though.

Easy and tasty enough but definitely not a wow dish, I used tinned tomatoe and think the sweet potatoe is unnecessary if having with rice

This is by far my favourite curry recipe to make! I sometimes change it up a bit, I like to add coconut milk if I have it on hand and sometimes swap the spinach for kale.

made this for my tea and it was really nice and not too spicy either, i added courgette to it to make it my own, even my dad ate it and he doesn't eat/like sweet potato. Will be trying this recipe again.

This is a great recipe: easy to make and tastes authentic! I did hope that it would be quicker to make however but that was due to cooking the chicken in oil. Next time I'll cook them a little before putting them in the oil to speed it up a little.

Folding in just means instead of stirring the ingredients together, you use a serving spoon as it is slightly thinner that a wooden one, and lift and turn the food together till its mixed, this prevents the sweet potatoes, in this case, being damaged by vigorous mixing.

Amazing recipe! The first time I have ever cooked a curry and it was so easy! Will definitely be doing this one again. I added mushrooms and instead of chicken thigh fillets, used diced chicken breasts. Didn't need rice as the sweet potato was carb enough and a healthy carb at that! Who would have thought I could eat a curry and feel healthy for it :)

I froze a couple of portions of this and we had it this evening and it was lovely. Just popped in the microwave until piping hot (scolded my mouth actually as I couldn't wait for it to cool down before I ate it!) the sweet potatoes broke down quite a bit but it wasn't necessarily a bad thing, just gave it a thicker texture.

This is a lovely simple curry that I make often. I wasn't too sure about sweet potato in a curry and am not a great fan altogether but this recipe has converted me. Just a bonus that its good for you too. Only slight thing to note is that I have found it doesn't freeze all that well.

This curry was amazing and my husband agreed, it really did taste like something you would get at a good curry restaurant! It was so quick and easy as well. I used Balti curry paste as I couldn't get a Rogan Josh one (used 3 tablespoons) and I used a tin of chopped tomatoes, other than that everything else was as per the recipe. I will make this over and over again.
