Ingredients

  • 2 small red onion, thinly sliced
  • ½ tbsp olive oil

  • 2 garlic clove, finely chopped
  • ½ tbsp ground cumin
  • ½ tbsp smoked paprika
  • ½ tbsp chipotle paste, or Tabasco, to taste
  • 400g can black bean, drained and rinsed
  • 400ml vegetable stock
  • half-fat soured cream, to serve
  • coriander leaves, to serve
  • crisp tortilla chips, to serve

Method

  1. To make the lime-pickled onions, combine ½ the lime juice and ½ the onions in a small bowl, and season. Leave to pickle for 30 mins.

  2. Meanwhile, heat the olive oil in a saucepan over a medium-high heat. Add the garlic and remaining onions, and season. Cook for 8 mins or until the onions are translucent. Add the spices and chipotle purée, cook for 1 min, then add the beans, stock and remaining lime juice. Simmer for 15 mins, then purée in a blender.

  3. Pour the soup into a clean pan to reheat. Serve with a little of the drained pickled onions, topped with a small drizzle of soured cream and some coriander, and the tortillas on the side.

The site won't let me rate this but I'd give it 3.5 stars. The lime flavour was a little overwhelming for me (maybe I had very Limey limes!) but it was quick and easy to do and I liked the pickled onions. I toned the limeness down with soured cream which went very well indeed.

VERY delicious! But I had to add more than 1/2 tbsp. of the spices as I like my
Mexican food hot. Thank you for posting this easy and tasty recipe!

Made this tonight. Very quick to make and souper (!) tasty. The marinated onion really tops this off. Highly recommended.

This soup is so delicious and filling! I couldn't find black beans in my local Asda but Sainsbury's had them. I think the lime gives the soup a real lift, I will definitely be making this again, great recipe for a fasting day if you do the 5:2 diet :-)

Easy peasy and delish, I made this exactly as the recipe suggested and it needed no adjustment. My smoked paprika was a hot smoked paprika which meant it ended up pretty poky but very much to my taste. The lime-pickled onions added great colour, some zing and a but of crunch. We also had some chargrilled chicken and guacamole on the side.

Made this last night and was so beautiful. Didn't make the lime onions though. I also used kidney beans and found some chipotle paste and smoked paprika - worth the extra expense. I also used 500 ml of veg stock (melting stock cube). Will have to 'double up' next time and fill up my freezer. Had to blend with a stick blender which was a bit messy.

Made this tonight for dinner as saw it on the front page & thought it looked interesting - and it was awesome! Cheered up a boyfriend suffering with a cold - 'one of the best soups he'd ever tasted', apparently! The flavours were really different and refreshing, but it was still a warm and comforting soup. Used kidney beans and just a fresh chilli instead of Tabasco as that was what was in the cupboard... The lime pickled onions are totally worth the (slight) extra faff too!
