Lime Nicoise Salad

A light, fresh twist on the traditional nicoise salad

Ingredients

  • 2 boiled eggs
  • 1 tin of tuna
  • 3 tbsp lime juice
  • handful of raisins
  • 1 apple, diced
  • bunch of spring onions, sliced
  • 1 green pepper, sliced
  • 2 tomatoes, chopped
  • 1/2 cucumber, sliced
  • tbsp basil
  • tsp crushed black pepper
  • 50g spinach leaves
  • 50g rocket leaves
  • 50g lettuce

Method

    1. Boil eggs
    2. Meanwhile, empty can of tuna in a bowl and add 1 tbsp lime juice. Mix
    3. Slice the eggs and mix with tuna
    4. Add all other ingredients to bowl and mix with 2 tbsp time juice
    5. Add egg and tuna, mix in well and serve

My favorite part of this recipe is the use of apples as a strach-free substitute for potatoes! And the dressing is down to natural juices and lemon juice; it doesn't get healthier than that! These little twists really elevates the salad to a new level of 'light and fresh', which isn't always be guaranteed with some of the dense nicoise classics.

I have to add this was also one of the cheapest dishes I have come across. A definite favorite!
