  1. Heat oven to 200C/fan 180C/gas 6. In a large bowl, toss the sweet potato chips with oil and soy sauce. Transfer to a shallow roasting tin and season with black pepper and nutmeg, if you like. Bake for 30-40 mins, until crisp.

I coated my chips with rice bran oil (nice light oil, with very little taste so doesn't influence the taste of the food it's oiling) ground some black pepper, sea salt and a nice pinch of Bart's creole seasoning and cooked on 225C for 35 minutes. They were so good i'm tempted to go and make some more straight away! These are my new favourite food!

Got these currently baking in the oven. Had to switch the soy sauce for rock salt as I didn't have any. Also added some chilli flakes, because I like a bit of heat!

Very nice with some fresh rosemary and thyme sprinkled on top. A friendly warning: don't go overboard on the oil.

They tend to burn if you increase the oven temperature and I'm guessing that's because of soya sauce. They were ok but nothing special.

I parboiled the chips for 10 minutes with a clove of garlic and chopped green chilli and spring onion bulbs in. Put chips in oven with oil like you would cook roast potatoes on 200 degrees turning once half way through cooking. Served with Thai green curry. Delicious. Mine were crispy on outside but soft on inside. Will be making again.

This recipe makes for delicious sweet potato wedges, I also made the oven hotter at gas mark 7 and after 30 minutes they were crunchy on the outside and soft in the middle. Yum!

Good but if you want them crisp you need to par boil the chips for 5 mins and preheat the oil in the oven. Make sure there is plenty of oil in there and cook in a hot oven (220 degrees) for at least 35 mins. They will go crispy, just be patient!

Sorry, should have mentioned that I don't use the nutmeg, but rather drizzle with a little honey half way through baking...careful not to use too much.

These can be done on a baking tray, but remember to turn them half way through. Also, soy sauce is optional. I prefer them simply seasoned with salt and pepper.
